Avocado Deviled Eggs
and just like that another month passed without a post… :: insert palm to face :: I needed a break from social media for a bit. The world is scary right now. I have been unplugging a lot after work.. the endless Zoom calls are getting so tiring. Not to mention my company has been struggling lately… I work in Aerospace and with Covid, well clearly things have been a bit dire in that area of work. I am very fortunate and lucky to have a job still, but it has been a uphill battle to say the least for what seems like the better portion of this year. On…

Crispy Mushrooms & Kale
Hello friends! Happy Thursday! I don’t know about you by my garden is really producing a lot of stuff now. Why does it always happen that all of the good vegetables come all at the same time? Then you have to use all of them super fast! My mom has a really beautiful garden as well and she has made just about every zucchini dish you could ever imagine. I had some kale and I needed to use it so I went searching on the interwebs for a good recipe. I came across the one that I found and honestly I was not expecting the results to be as good…

Winter Brussel Sprouts & Onion Sauté
Happy December! Seriously where in the world has this year gone? I apologize for my lack of posts this year… I have had a lot of change happening. Good change I think, but change none the less. My new job is going well, it is SO new to me, but thankfully I work with a lot of really supportive people. It is nice to know that people are there to work with you and not against you. Changing jobs has literally turned my life upside down..my schedule has changed, I have had many personal struggles and new hurdles to try and conquer this year. To say the least. Changes is…

Snickerdoodles {Paleo}
Confession… I love cookies. and cinnamon. But mostly cookies. I mean this is my second cookie post this week. Dogs and cats living together…MASS HYSTERIA! (name that movie and I’ll be your friend forever 😉 ) Enough about cookies… I am super excited today because I am headed to see one of best friends in the WHOOOLE world! Chrissy! WOOHOO! I love this girl so much. She actually just came to visit me but she’s got a big birthday coming up and I am SO excited to celebrate with her. Heading down to the Philly area to see some old friends and check out the old stomping ground and hang…

Blueberry Banana Muffin Bites {Paleo}
Holy more snow Batman! We are still digging out from snow again! New England was having SUCH a mild winter and then BAM, we got like 40″+ in a week span. What is the deal? Don’t get me wrong, I do love the snow, it is gorgeous and pretty and I truly enjoy looking at it. However, when you get older the playing in the snow goes away and the cleaning it up becomes more of the deal. Oh well. It wouldn’t be so bad if Patrick was around more, but the hubs travels a lot. He is Germany right now so it is tough. BUT, he did get to…

Quinoa Pizza Crust
I am always looking for ways to have pizza and not do too much damage to my waistline. The hubs practically lived on pizza before we met, so I do my best to try and make it for him every once in a while. We eat cauliflower crust pizza at my house probably once a week because it is easy to make and great for you, but it doesn’t have the same “crunch” as normal pizza does. You know what I am talking about… The crust crunch you get when you go into a townie pizza parlor and the crust smells and tastes like it as made of angel wings.…

Roasted White Sweet Potato Fries
So this weekend we got some serious snow. Not as serious as some of the other storms we have had, but the rate at which it came down was the problem. I tend to like snow, but when you have to clean it up? Not so much fun anymore. I still think is is beautiful and since Patrick and I live in the woods, it makes for some pretty amazing views. We also tend to find some interesting prints in our snow after a big one, not sure if it is the neighbors cat or a animals from the woods. Probably a bit of both right? Speaking of critters… I…

Cinnamon Crackle Cookies (& Wedding Stuff)
Holy cow… So, first off… HELLLLOOOO!!! Oh my gosh, it has been forever since I have posted. I missed you all so so much! It has been a crazy couple of months. But, I am married now! Can you believe it?! I can’t. It was quite possibly the most magical and happiest weekend of my life. Don’t get me wrong, it was stressful and hectic but it was amazing. We got to see SO many people we loved. So much family and so many friends. It was amazing! Not to mention the actual day of the wedding was so seamless. I cannot say enough about The Lord Thompson Manor and…

Peanut Butter Cookies {Gluten Free}
I am sharing a Peanut Butter Cookie today. Do I have your attention? If you are anything like me, I definitely do. I love Peanut Butter more than I could possibly say. Literally, I think I could eat it out of the jar with a spoon…every.single.day. and be completely happy. When I was younger, my Mom used to babysit as her profession so she always got those huge 5lb drums of Peter Pan peanut butter that you get at Sams, BJs or Costco, because she was always feeding 10 kids peanut butter. Because, let’s be honest…most kids are picky but they love peanut butter. I used to take those huge…

Pan-Seared Scallops with Cauliflower “Mash”
Do you like home renovation projects? Patrick and I are constantly working on our house. There is a sense of satisfaction when you finish and it is something you have worked on and it actually looks nice! Granted my parents have been nice enough to show us the ropes on many, many, MANY home improvement tricks. I have watched my parents flip houses for years and have been a part of many of them. So I suppose it is only natural that I am wanting to do the same thing with my own. I am pretty sure Patrick thinks I am nuts, but he seems to be enjoying the process…

Homemade Greek Yogurt Cheese
Wait…did I read that right? Yup, you did. Homemade.Greek.Yogurt.Cheese. That just happened. I love cheese, but most of the time it doesn’t love me back. I have been avoiding cheese on the whole as much as I can. Maybe a few sneaks here and there, but on the whole I have been avoiding it for about 3-4 months now. Believe me, I love it. A big bowl of Mac & Cheese? Amazing. My stomach agrees…for about 15 minutes. 😉 My mom found a recipe to make cheese from Greek Yogurt and of course I was intrigued. I love Greek Yogurt. Love eating it with fruit, cooking with it, using it…

Rosemary Roasted Almonds
Good Monday Morning. Did you all have a nice weekend? Mine started off with me buying a wedding dress! AHHHHHHHHHHHHHHHHHHHHHHHH! That’s right, this is getting reallllllly real now. My mom and I went to the bridal shop on Friday already having an idea of which dresses to choose from. We had narrowed it down to 2 after my 2nd visit to the shop. I did my hair nicely and had some nice earrings on and actually wore high heels as to get a better idea of what the dress would look like. We went in open minded and I had one other dress I wanted to try but we were…
