Tomato Pie (wait…what?)
Yes. You read it right..tomato pie. Tomatoes are in season right now, and I know, I know…you are supposed to make salsa and tomato sauce with the leftover 101 tomatoes you have from your garden…welllll, I decided to break from the mold and try something new. Yup, you guessed it, tomato pie! Fair warning: this is pretty time consuming recipe…then again, I don’t know of too many pies that aren’t pretty time consuming 😛 OK, so let’s begin, shall we? Ingredients for pie Crust: 1 stick of butter (unsalted) 1-1/4 cups all purpose flour 1 teaspoon salt 1 teaspoon sugar 2-4 tablespoons (very) cold water Directions for Pie Crust: Freezing the butter…

Kabobs
Love summer time! Summer time to me is so much fun, not just for the sun and vacations…but for the grill! I find that if I am ever in doubt as to what I should make for dinner…I head for the grill. You can make some of the best food on the grill….although I have to admit I have had some mishaps. Like, for example, the first time I tried to make pizza on the grill. Let’s just say the people at the grocery store saw me twice in one day, one hour apart. 😛 Anyways, I wanted to make something on the grill and kabobs are always a good…

Zucchini & Squash Pasta (aka I have WAY too many veggies right now from the garden…so what can I come up with? haha)
CLEARLY! You can see that I have an excessive amount of vegetables that I need to use. Apart from my making zucchini bread every other day I wanted to come up with something to use all these goodies. Cucumber & Sour Cream Salad
This one of my favorite recipes…has been for a really long time. My mother taught me to how to make it and her grandmother taught her how to make it. I know that many people have probably heard of it, eaten it, made it…but it is a family tradition that I wanted to share so others could maybe do that same with their family. Ingredients: 2-3 small cucumbers 1/2 cup of light sour cream (cannot really use non-fat for this it has too much liquid) 1 teaspoon pepper 1 tablespoon dill 1 teaspoon kosher salt I like to peel my cucumbers when I make this salad, but it completely up…

Garden Fresh…
On top of everything else I do…I enjoy working out. I really try my hardest to work out 3 times a week (on top of playing softball in an adult league, which I do 2 times a week). So, a lot of times I really would rather just go to the gym right from work…that way I don’t get settled at home and then not go at all! haha 😉 Anyways, so after my intense cardio session this evening I came home wanting something light. Then remembered…”hey! I have a ton of fresh veggies in my garden!”….BINGO! I made a salad this evening with all fresh ingredients right from my…

Chicken and Veggies
Little more food for everyone…I enjoy cooking with fresh ingredients…I seldom cook with anything but! It is hard sometimes in the winter though, which is why I love the summer SO much! 🙂 (sauté mushrooms with butter and garlic, toss in tomatoes for sweet taste – cook on high heat until liquid is reduced. Throw in peppers at last second so they do not lose their bright colors.) (marinate chicken in lemon juice, salt, pepper, rosemary, and olive oil for an hour. Grill up and eat warm) Ingredients: Chicken, Rosemary, Red peppers, Green peppers, Mushrooms, tomatoes, garlic, salt and pepper to taste.
