Happy Wednesday everyone! Hope you are all enjoying your start to your week. We have been having a slight glimpse into spring here in Connecticut, but it appears that it is going to change back to rather bitter cold by tomorrow :-(. What a depressing weekend for Steelers fans…I myself am a Steelers fan because I lived in PA for a while. I was closer to Philly, but I really didn’t like the Eagles…so I went with the other team. I went to college closer to Pittsburgh than Philly anyway. I was so disappointed, I really felt like Pittsburgh was the better team but because of interceptions and fumbles we just got killed. I think on everything else in the game the Steelers really outplayed the Packers. Love summer time! Summer time to me is so much fun, not just for the sun and vacations…but for the grill! I find that if I am ever in doubt as to what I should make for dinner…I head for the grill. You can make some of the best food on the grill….although I have to admit I have had some mishaps. Like, for example, the first time I tried to make pizza on the grill. Chicken and Veggies
Little more food for everyone…I enjoy cooking with fresh ingredients…I seldom cook with anything but! It is hard sometimes in the winter though, which is why I love the summer SO much! 🙂 (sauté mushrooms with butter and garlic, toss in tomatoes for sweet taste – cook on high heat until liquid is reduced. Throw in peppers at last second so they do not lose their bright colors.) (marinate chicken in lemon juice, salt, pepper, rosemary, and olive oil for an hour. Grill up and eat warm) Ingredients: Chicken, Rosemary, Red peppers, Green peppers, Mushrooms, tomatoes, garlic, salt and pepper to taste.
