I hope you enjoy it. I like mine a little on the spicier side. Feel free to leave the hot peppers out of yours…it will be just as tasty!

One of those days…
….yesterday. (that’s a good Beatles song btdubs – “btdubs” is how I say bytheway, because if you say ‘W’ out loud it can be said as “dub” – just a little fun fact about Raven 😉 ) Yesterday was one of those days where it was absolutely necessary to blast AC/DC on my way home from work…and also one of those days where I couldn’t get to the wine bottle fast enough after getting home. Whew…work has been so busy this week that I can barely keep my head above water. I literally embodied the phrase “looking like a chicken with her head cut off” yesterday. So, after having an…

Veggie Junkie
::sigh:: I just love vegetables. I really do! I get such a hard time from most people about loving vegetables so much, but I swear, cross my heart and hope to die, that I really, TRULY love vegetables! 🙂 My dad tells me that I was a rabbit in another life because I eat so many vegetables… maybe that is why I feel so comfortable around my bunny, hehe I wasn’t always a vegetable fan…well, OK…maybe I was just a little bit, BUT I didn’t like a wide variety of vegetables like I do now. Here is a story for you… When I was little, I ate carrots like they…

Tomato Pie (wait…what?)
Yes. You read it right..tomato pie. Tomatoes are in season right now, and I know, I know…you are supposed to make salsa and tomato sauce with the leftover 101 tomatoes you have from your garden…welllll, I decided to break from the mold and try something new. Yup, you guessed it, tomato pie! Fair warning: this is pretty time consuming recipe…then again, I don’t know of too many pies that aren’t pretty time consuming 😛 OK, so let’s begin, shall we? Ingredients for pie Crust: 1 stick of butter (unsalted) 1-1/4 cups all purpose flour 1 teaspoon salt 1 teaspoon sugar 2-4 tablespoons (very) cold water Directions for Pie Crust: Freezing the butter…

OHMYGOSH! People are coming over and I had no idea! WHAT DO I HAVE IN THE FRIDGE?! Ok, ok, ok….think. (ever had one of these moments??? I did just recently. I had no idea that people were coming over for dinner and fun because sommeeonneee had invited people over…which wasn’t a problem because I love the people he invited, BUT I was SOOOO not prepared to feed them!!) Hmmmmmmmmm, I gotta give them some kind of an appetizer….ok, vegetables and dip will just have to do. Ok, what else do I got here…I have some sourdough bread, fresh mozzarella, roasted red peppers, tomatoes, lettuce, ground sirloin…I GOT IT! Patty melts!…

To dine or Not to dine
I have to admit…sometimes it is nice to dine out! I swear sometimes even a mediocre meal can be fabulous when you dine out, JUST because you aren’t the one making it, hehe ;-). Honestly, I have been blessed in my dining experiences…I can probably count on one hand the amount of times I was less than satisfied with a meal I had out on the town. So, I can’t complain. Just recently I went to a restaurant in Cape Cod (Provincetown) that was really good AND had a really nice dining setting. It was called Pepe’s Wharf Restaurant and had a really nice menu (and by nice – I…

Family, Friends, & Fabulous Food
I love cooking for people. I don’t think there is anything better than when you have people you love around you enjoying a great meal. My parents hosted a get together for some close family friends who came to visit from PA. Our visitors used to be our neighbors when we lived in PA. When I was a teenager, I babysat their children (2 boys) for spending money in high school (and middle school too I believe). Let me tell you, there is nothing in the world that will make you feel older than seeing someone you used to change diapers for be, I don’t know, give or take, a…

Kabobs
Love summer time! Summer time to me is so much fun, not just for the sun and vacations…but for the grill! I find that if I am ever in doubt as to what I should make for dinner…I head for the grill. You can make some of the best food on the grill….although I have to admit I have had some mishaps. Like, for example, the first time I tried to make pizza on the grill. Let’s just say the people at the grocery store saw me twice in one day, one hour apart. 😛 Anyways, I wanted to make something on the grill and kabobs are always a good…

Zucchini & Squash Pasta (aka I have WAY too many veggies right now from the garden…so what can I come up with? haha)
CLEARLY! You can see that I have an excessive amount of vegetables that I need to use. Apart from my making zucchini bread every other day I wanted to come up with something to use all these goodies. Let’s put our thinking caps on here….. Ingredients: 1 Zucchini 1 yellow squash (seeded) 3 small tomatoes (any kind you like – I used plum) 1/2 of a green bell pepper 1 tablespoon fresh garlic 1 tablespoon butter 3-4 fresh basil leaves 1/2 teaspoon dried mint 1/2 teaspoon dried thyme 1/2 tablespoon red pepper flake salt to taste pepper to taste 8-10 oz Penne pasta handful of shredded Parmesan for garnish Started…

Cucumber & Sour Cream Salad
This one of my favorite recipes…has been for a really long time. My mother taught me to how to make it and her grandmother taught her how to make it. I know that many people have probably heard of it, eaten it, made it…but it is a family tradition that I wanted to share so others could maybe do that same with their family. Ingredients: 2-3 small cucumbers 1/2 cup of light sour cream (cannot really use non-fat for this it has too much liquid) 1 teaspoon pepper 1 tablespoon dill 1 teaspoon kosher salt I like to peel my cucumbers when I make this salad, but it completely up…

Momma knows best…
My mother is a great cook! She taught me most of what I know about food. So whenever she makes something…I am always one of the first people at the table to be the guinea pig. 🙂 She has a very beautiful garden and always uses her fresh vegetables and herbs to cook (which is where I learned it). Literally she is one of those people who has a garden that should be in a magazine…check it out:      I mean how much more gorgeous can she make this garden?! She is incredible… I enjoy spending time with my parents…most of the time 😉 I was visiting with…

Garden Fresh…
On top of everything else I do…I enjoy working out. I really try my hardest to work out 3 times a week (on top of playing softball in an adult league, which I do 2 times a week). So, a lot of times I really would rather just go to the gym right from work…that way I don’t get settled at home and then not go at all! haha 😉 Anyways, so after my intense cardio session this evening I came home wanting something light. Then remembered…”hey! I have a ton of fresh veggies in my garden!”….BINGO! I made a salad this evening with all fresh ingredients right from my…
