Baton Rouge, LA
Sometimes work isn’t always bad…This past week I spent some time in Baton Rouge, Louisiana for work. WHAT A FABULOUS PLACE!! I do a lot of work with a company called Turner Industries in Port Allen, LA. I had never seen their facility after working with my company for 2 years and I just couldn’t resist anymore. Let me tell you, I did SO much eating down there I think I am still full from it now. I cannot believe the amount of food that those people wanted me to eat down there. It was just one thing after another. They have so much food all the time and while…

Pananas Restaurant
I woke up this morning to SUN! YAY! 🙂 We got so much rain over the past few days. I think overall in my area we got anywhere between 6″-12″ of rain depending on where you were. That is more rain that we got all summer! Crazy…it did however make for some pretty pictures this morning as I sipped my coffee in the brisk 60 degree weather. (pictures courtesy of Mr. Liebro’s plants) The reason for my post today is because I went to a restaurant last night in Agawam, Mass and I wanted to share it with you all. It was one of the better meals that I have…

Rainy Day
Welcome to Thursday in the Northeast: Yup that means rain, haha! My area is expecting to get around 9″ of rain in the next 12 hours. Which means flooding and really bad drivers on the commute home today. For some reason in New England people forget how to drive when there is the smallest bit of condensation on the road. That is one of those things that drives me nuts. Yes, I understand that the visibility is low, but is it really necessary to drive 35 miles UNDER the speed limit? Methinks, no. Anyways, it was so hard to get out of bed this morning. I am one of those…

My First Canning Experience
YES! I did it! I canned for the first time ever this past weekend. I have to say, it was much easier than I thought it would be. Strangely enough, the only thing that took a good amount of time was the cooling down of the jars. I have always seen my mother canning since I was little. Jelly, tomatoes, salsa, sauce, cucumbers, peppers, anything she could, she was canning. Still does to this day. I mean even HER mother and my Dad’s mother canned! I used to watch it when I was little and the women in my family would say “some day you will being doing this too,…

The Big E
The Eastern States Exposition! Also known as The Big E. This is a fair that is put together every year for about 3-1/2 weeks in West Springfield, Massachusetts. They have everything you could possibly think of at the Big E…food, beer, crafts, shopping, rides, shows and entertainment, animals, and my personal favorite the State Buildings. If you click on the picture above it will take you to the website so you can see all the different attractions they have. I mainly wanted to share the food with you because, well…this IS a food blog haha ;-). Like any usual fair there was of course the carnival food, the fried Oreos,…

Football Quesadillas
So, most of you know that I LOVE football. I watch it every weekend and I am very dedicated to that. Along with the football there has to be food…I like to graze in general when it comes to food, and love it even more so when there is a game on. It just makes it so much easier to be able to watch the game and graze with a lot of food instead of having something that you need to sit at a fancy table for. Believe me, I like fancy dinners…but not during a football game 😉 This past weekend I put out a lot of different kinds…

Chicken Scaloppine with Lemon Sugar Snap Peas and Asparagus
Another week has started already! I don’t know about you, but this year is just flying by me. I can’t believe that it is September…I can’t believe that September is almost over!! I guess that phrase is right “time flies when you are having fun”. 🙂 I have a feeling that this week is going to be a good one. I think work has been going better lately, which is a huge stress relief for me. I have been doing really well and just bringing in the big bucks for the company, haha! I don’t mean to beep my own horn but…BEEP! 😉 It is hard to be younger and…

Peanut Butter Chocolate Chunk Cookies
It’s cookie time! I was in SUCH a baking mood this weekend and I have no idea why. So I decided to try out a new recipe and man-o-man did it turn out well. I am one of those people who love simple cookies. Chocolate chip and oatmeal are two of my favorites. I wanted to make something that was simple but had a little extra ‘something’. Peanut butter! 🙂 Ingredients for Peanut Butter Chocolate Chunk Cookies: 1/2 cup butter softened (aka 1 stick) 1/2 cup peanut butter (I used creamy) 1 cup packed light brown sugar 1/2 cup white sugar 2 eggs 2 tablespoons light corn syrup 2 tablespoons…

Honestly, there are SO many different meals you can make with pasta! It is so versatile! You can make it vegetarian or with meat, cold or hot, and there are so many different varieties! So, this dish below was just a dish that I came up with from the ingredients I have in my refrigerator. It was simple and easy and always the best part, pretty healthy as well! Ingredients for Broccoli Pasta: Angel Hair pasta 1 Broccoli head 1 Zucchini…

Good Deed, Coffee, Commute, & Lunch
Happy ALMOST Friday everyone! I had an interesting morning coming into work today, and for some reason interesting mornings always make me feel like it is going to be a good day. I am not sure why…but they do. Maybe it is because I seem to have the same routine every morning so when things go a little differently, it feels good to break from the mold. I am sure a lot of you know what I mean, you get stuck in ruts of doing things the same way every.single.morning.over.and.over.and.over.again.every.single.week. So, I walk out of my house this morning…. I was running a little late this morning btdubs! I normally…
