Lemon Poppy Seed Muffins
I woke up this morning to a cold 26 degrees here in New England. I am craving spring. I am ready for the warmer weather to be here and for it to be sunny. Ready to be able to go outside and walk around at lunch time at work. I love the changing of the seasons but I am so ready for the warmer weather. This has been an especially rough winter so I am looking forward to the nice and bright sun! In the spirit of spring I wanted to make a muffin that made me feel like it was here, since clearly it is not yet. Whenever I…

Homemade Tortilla Chips
You know what I love? Chips and salsa. I am one of those people who could munch on chips, salsa, and guacamole all summer long. I went to Mexico a few years ago and let me tell you, I think I ate about 17 lbs of guacamole in a week. Not kidding. I ate it with breakfast, lunch, and dinner. Any time I could get away with it I was eating it…it is good for you right?? haha It is tough right now because avocados are really not all that good this time a year in New England. However, I did have salsa that I made in the summer that…

Black & Blue til You are Pink Muffins
It is Monday again…can you believe it?! My weekends always go way too fast. I hate that! haha…it seems like no matter what I do those 2 days always go speeding past me clocking at a 90mph pace. I have heard that it only goes faster as you get older too…sheesh! I don’t know how it could! I think my weekend went fast because I had rehearsal for the show that is coming up. That always seems to make things go faster. I was able to have a little fun though on Saturday night. One of the girls in the dance company turned 30 so we all went out for…

Sesame Noodles with Chicken
It’s Friday!! What a week this has been! I think that being gone to California really put a dent in my workload at work. I just cannot seem to get ahead of the game. Needless to say I am pretty happy about it being Friday not only because it means I don’t have to work tomorrow and I get to sleep in, BUT one my girlfriends at work went on a “HOT DATE” last night and I can’t wait to hear about it!! 😉 Last night I wanted to try and make something a little different (and healthy) for myself. I am always looking to try new recipes but sometimes…

Crustless Spinach & Feta Quiche
I think I may finally be catching up on some sleep. I lived up to my promise and made it to bed by 10pm, which I have to admit I was really happy about. I feel a little more refreshed today and not as sluggish. THAT is a good thing because I have presentation to give at work today…I hate giving presentations when I don’t feel up for it, so I am very glad that my body is starting to feel a bit more normal today. Whew! Also, I have figured out a way to comment on blogs again. Not sure why my WordPress ID isn’t working but I am…

Sugar Spot Banana Cranberry Muffins
OK so…for some reason I cannot comment on ANYONE’S blog haha. I am trying to post things on Foodbuzz on all your posts. Sorry fellow foodies! I feel bad but for some reason I am just not able to comment. Big bummer because there is so many great recipes out there that I totally wanna compliment too! Grr…hopefully the cyber world gets itself figured out! I am seriously struggling with the time change! I thought it would be much easier for me to get used to, but I am having a hard time. Yesterday was really tough because it felt like I was getting up at 3am, when it was…

Oatmeal with Fruit Compote
I am back! First off, when I woke up this morning it felt like it was 3am. That was not fun haha. I found that going out to California I really adjusted well to the time difference, but the coming back to CT? The time change is being quite a pain. I thought that I would be able to adjust just as easily…not so much. 😛 The weather in California was so glorious…I cannot even tell you how great of a break it was to have some actual sunshine that had warmth to it. It was in the high 60s, low 70s the whole time I was in California and…

Hoisin Beef
Ahhh the warm California air is so glorious! So what am I doing blogging right?? Well, I had this post saved so that I could post it while I was away because I did promise you all another recipe from my Great Food for Great Friends post. Here is the last recipe from the night of cooking with my friends. The recipe is for Hoisin Beef skewers. I wanted to make something that was easy for my guests to eat AND enjoy. That is why I decided to skewer the beef. The original recipe was for beef tenderloin steaks but this was a little less formal and more keeping with…

Pot Stickers
I am such a dork…I literally get so excited about the silliest things. For example, I painted my nails green for St. Patty’s Day (also my favorite color). I wanted to make sure to get them painted before my trip to California…whaddya think? Greeeeeeen! Guess what else I am excited about?! I am leaving for California today!! :-D. Yay!!! I cannot tell you how ready I am to be going away to someplace new… ::dances in chair:: Again as promised my dears a “recipe to come…” from my Great Food for Great Friends post. This one is the pot stickers recipe. I am going to show the ground turkey version…

Baked Salmon Eggrolls
As promised folks, this is the first post of me “recipes to come…” list from my Great Food for Great Friends post. I can hardly sit still right now because I am getting so excited for my California trip. I leave tomorrow at 4:30pm. It is getting so close! The only bad part is that means that I won’t be posting anything for a while on my blog :-(. BUT, you better bet (“You better you better you bet, oooo-ooo” – The Who) that I will have lots of pictures and stories to share when I get back! Anyways, this recipe is Priscilla’s Baked Salmon Eggrolls that I saw on…

Great Food for Great Friends
Saturday of this past weekend was a fun day…I invited over some good friends and we had a great time eating, drinking, and just socializing. Once I knew that people were going to be coming over I decided I wanted to do something a little different for dinner than what I normally do. It is always great to break from the mold :-). I know a lot of people who tend to try and stick to what they know when they have guests coming over because normally, that makes for a guaranteed good meal. ::raises right hand:: I am very guilty of this! However, this time I wanted to step…

Oat-topped Fig Muffins
Hello, hello! I have less than 3 days until I got to California! I cannot tell you how excited I am. It is going to be so nice to get a break from the normal and have a mini vacation. I am definitely counting down the days! OH and a side note, thank you to all of you who donated this weekend for my cancer walk in July…you all have been so generous and I am so grateful to have each and every one of you in my life. Your support is so amazing! This weekend was kind of hectic but not in bad way. I had a dinner/get together…
