Finding Center
Hello my friends. Happy Holidays! It has been a while hasn’t it? I have to admit that things have been a little hectic and I really haven’t had much time to blog or even cook really. I have been using the time to try and get myself centered. Sometimes you need to take a break and just step back for a bit you know? Take time to just be with the people you love and focus on yourself. I am guilty of trying to do too much and not give myself enough rest. Taking a break from blogging has been my way of taking a few things off my plate…

Snickerdoodles
Are you all geared up for Thanksgiving? Can you even believe it is here already?! This year has legitimately gone faster than any other year I think I can remember. People always told me when I was younger… “time goes faster as you get older”, oh pish posh! I would think. It could not be more true. AmIright? The older I get the more I think I forget to stop and think about what I am truly grateful for. You just get so busy that you forget to remember what is right in front of you. Today is a bit of reflection for myself. If any of you are friends…

WDD – Healthy Four Bean Chili
Hello all!! I have been lucky enough to take part in Carolyn’s Diabetes awareness post and I couldn’t be happier to help raise some awareness. Please check out his post from Carolyn over at All Day I Dream About Food. If you do not know Carolyn, now is the time! She makes the most amazing things and all of them are low carb. I don’t know how she does it, but she is an inspiration! She is also a hosting KitchenAid giveaway (blue in honour of diabetes awareness), go on over and check it out! One of the reasons that I really wanted to get involved with this post to…

Pecan Streusel Bread
Some of the best days of Fall are spent curled up under a blanket or baking something to warm your family’s tummy on a brisk day. If I had to pick one or the other…I am not sure I could. I do enjoy both very much these days. I find as I get older the “under the blanket” option is much more appealing. 😉 This bread I am sharing with you today is something my mom and I picked out as a good treat. It was featured in the Cooking Light magazine this past month, which was a special addition issue. Had all of their favorite recipes over the past…

Spooky Cookies
BOO! Happy Halloween! First of all, any and all of you who have been affected by Hurricane Sandy. My heart and prayers go out to you. Here in CT we didn’t get hit as badly as we did last year, thank goodness. I am not sure we could have taken 2 years in a row with so much damage from all the storms we have had. Please be safe! There are a lot of crazy things happening right now so just make sure you stay safe and smart. Can you believe that it is Halloween already? I can’t. Thanksgiving is going to be right around the corner and I then…

Pumpkin Spice Rice Krispie Treats
Hello my lovelies! Has been a while since I have posted something, but life kind of got in the way. I know you hear me out there. I had some family issues pop up which made it very hard for me to get any kind of cooking done. I won’t give you the details since it won’t do anything but make you sad. No need for that. Just if you get a spare moment, send a prayer towards my family if you can. We would gladly take all the prayers/positive thoughts we can get. So it is Fall huh? Finally my most favorite season is HERE. Lots of colorful leaves…

Baked Jalapeño Poppers
Waking up to these cool mornings makes me happy. Walking to my car in the morning to head to work with the brisk air hitting my cheeks and taking a deep breath in of the crisp scent of Fall. Can you tell I love Fall? It reminds me of family, gathering with friends, riding on hayrides, apple cider doughnuts, tons of delicious food and {dare I say it} Christmas planning! There is just something about this time of year that makes me happy, to my bones just happy. Whether it is cuddling up with a book and reading in front of the fire or working on a cross-stitch while watching…

Caramel Apple Cookies
Happy Thursday everyone! Although it isnt so happy for me. I am stuck at home with a double ear infection as well as a sinus infection. Needless to say, I am not feeling the best. I think it may have something to do with the Rugged Maniac that I completed this past weekend. My 3rd and final race down! However, I don’t think the ice cold pools of dirty water were good for me. Seems kind of strange that only 2 days later I came down with some pretty serious infections. Hmmm…linked perhaps? I think so. The race was hard and definitely physically demanding. A step above the Warrior Dash…

Pumpkin Pie Cake with Cinnamon Buttercream Frosting
OK, so first off this day has been like the day from absolute hell. GAH! Work is driving me absolutely bonkers. I feel like I keep spinning my tires and doing all this work for people and then I get trampled on. Ever have those weeks? Can’t seem to get anything done, or do anything the way people want to see it. I am one of those people that NEVER half asses anything. I don’t have the ability to. It must be in my blood or something, because I will literally not be able to sleep at night if I don’t do something to my full ability. Anyways, I am…

Apple Upside Down Cake
I did it!! I completed my first race! WOOO!! The race I participated in was called the Tavern Trot and all the proceeds went to Alex’s Lemonade Stand, which I just love. Anything I can do to help out kids with cancer, or anyone with cancer I am all about it. It was actually a 3.5 mile race. I thought it was a 5k, but apparently it was a little farther. So here were my results: Ran 3.5 miles in 33:06 (9:28 pace) 16th out of 81 in my age group 66th out of 409 for females I am so proud of myself!!!!! This is the one time that I…

Maple Pecan Popcorn
Happy Thursday Friends! Is anyone else glad that it is almost the end of the week? I sure am! Seems like the weekends go by so fast and the weeks just go slow, so I am always happy when the weekend is almost here. Plus that means that Patrick and I get to work on the house some more. I am so glad that we decided to do the majority of it ourselves. I know it takes a lot of time and sweat to do it, but it is SO rewarding when you see things getting done. It is super exciting to see! So most of you who follow me…

ABQ
Hello my dears! How have you been!?? How was your Labor Day? Mine was spent hiking up the Sandia Peak, but more on that later. I just wanted to do a quick post and let you know that I am alive. I haven’t posted in a while and that isn’t because I haven’t wanted to. Things have just been a little craaaazy lately. Again, no food this time, but that is alright. We are taking a break from the food posts for 2 weeks and then we will be right back in them next week. No worries, fellow foodies. BUT, I thought you all might enjoy some pictures of Albuquerque.…
