Mac and Cheese (with a surprise!)
I LOVE macaroni and cheese. It is one of those things that I just love to have on any kind of day. Rainy day, sunny day, warm day, cool day….doesn’t matter. Mac and Cheese is a SUPER comfort food for me. When I was little my mom used to make it with chopped hot dogs. That was my favorite thing in the world. She used to make it with multi-colored rotini (I love rotini) and I would pick out all the green and orange-colored ones because I thought they tasted different, even though they really don’t haha. I was a little picky when I was younger.
I always thought that my mom made the best macaroni and cheese and I wanted to make sure that I could make it when I moved out. So one day she taught it to me and it never came out as good as hers. So I adapted the recipe that she gave me and made it my own. It is one of my favorites and you can add anything you like to the mac and cheese. This time I added broccoli, but normally I don’t add anything because it is just the best mac and cheese by itself (just ask my bf, he asks for this mac and cheese constantly! haha)
Ingredients for Mac and Cheese:
(quantities will vary depending on how many you are feeding – this was for 3 people with at least 2-3 extra helpings)
1 box Penne/Rotini/or noddle of choice
1 cup velveeta (2% variety)
1/4 cup of shredded mozzarella
1/4 cup cheddar cheese
2 tablespoons of light sour cream
1/4 cup skim milk
1 teaspoon season salt
1 teaspoon salt
1-2 teaspoons pepper
*added broccoli for this recipe
1 broccoli floret head
1/2 clove garlic
1/4 cup dry white wine
1-2 teaspoons olive oil
salt and pepper to taste
So here we go! To start out get yourself a medium-sized bowl and place the following ingredients in it. Also, start to cook your noodles. I personally like my noodles a little undercooked for this mac and cheese but that is completely up to you!
Place these ingredients into the microwave and melt them all together. Normally takes around 3-4 minutes. Stir occasionally to make sure everything is getting mixed together. Once it has melted all together just place it aside until the noodles are done.
In a skillet on medium to high heat place garlic and olive oil. Cook the garlic until it has turned brown and pour the white wine into the pan. Throw broccoli into the pan and cook. I like my broccoli on the crunchier side. If you like it more done, cook for additional time.
Drain your noodles and then place them back into the pot you cooked them in once you have drained them thoroughly
