Herb Salmon with Lemoned Green Beans
It’s Friday!! I am pretty excited for the weekend to be here. This week has been busy, to say the least, and next week isn’t going to be much better. Needless to say I am totally looking forward to a relaxing weekend. Maybe I will even take the bike out for a ride since it is supposed to be so nice. Winning!
Whenever it is a nice out I have a really hard time not firing up the grill every day of the weekend. You can make so many different things and it always seems to taste good. The taste of food coming off the grill just reminds me of good times and warm days. What does it remind you of?
This recipe for salmon on the grill is so easy and so tasty. For any of you salmon lovers out there, *ahem* Priscilla π , this was really good. I used chive flowers in this as you can see below in the ingredient list. Now before you turn your nose up at this, hear me out. Not too many people know that you can not only use the green part of the chive, but that you can also use the purple flower that is on top. The best way to pick the flowers is get the ones that aren’t completely open, they taste better, but if all you have is full bloom go for it.
The flavor of the chive flower is so unique and doesn’t taste like the actual chive itself. It has a sweet flavor to it and can be added to all sorts of things like mashed potatoes, dressings, or even fish like I did here. It will add a hint of sweet freshness to your dishes that will pleasantly surprise you.
Ingredients for Salmon:
- Filet of Salmon (without skin, love that!)
- 1 clove garlic
- 1 teaspoon fresh basil
- 3-4 chive flower petals
- 1 tablespoon olive oil
- freshly cracked pepper to taste
Ingredients for Green Beans:
- Green beans
- 1 1/2 tablespoons butter
- 1/2 teaspoon grated lemon rind
- 1 teaspoon fresh lemon juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground pepper
Preheat your grill.
Put your piece of salmon into a piece of foil and sprinkle all the ingredients on top and then drizzle the olive oil over top. Rub the ingredients into the fish and then seal up the foil.
Place the salmon on the grill and cook until the doneness you prefer. Now, I made my foil pack so that the salmon was not going to be flipped. This created a nice crust on the bottom of the fish that I really enjoyed. If you prefer to flip your fish then just make sure you seal the pack tight.
With the foil pack I made the fish took about 10-15 minutes. Not long at all.
While the fish was on the grill I took my green beans and submerged them in boiling water for 5 minutes (cook for longer if you like your green beans to be less crunchy, I personally love crunchy green beans) and then took them out and placed them into an ice bath to stop the cooking.
I placed the butter into a nonstick pan and cooked over medium-high heat until the butter started to brown. I added the green beans into the pan and then added the lemon rind, lemon juice, salt, and pepper. Toss all of that together and you are all done!
Now, if you prefer to have your salmon right on the grill, by all means please do! My salmon did not have the skin on it and that makes it a little harder to grill which is why I decided to “steam grill” it.
And don’t forget try those flowers out and see what you think…I think you might be surprised at what you find when you try them
