Nutella Banana Turnovers

I made it! 14 days on the detox and I made it. WHEW! What an experience that was! Thanks again to all of you out there that supported me the whole time. It was so very much appreciated, I cannot even express my gratitude.

Although the detox is over there are some things that I learned from it that I really feel like I am going to keep with me. The eating small meals every few hours I think I am going to stick with. That really helped my body stay alert and full of energy, which I really liked. Another thing I want to keep doing is eating breakfast! A lot of you know that I am not a breakfast person, I really haven’t ever been…having a piece of fruit in the morning with some hot tea really helped me to get my day started, so I am going to continue that. There are a lot of things I want to keep going with, so I am actually very happy that I decided to do this detox. πŸ˜€

Since I worked so hard on the detox for a full 14 days I wanted to give myself a treat, hehe. As I was perusing the internet for an idea of what I could make I came across a recipe for banana turnovers. This was very interesting to me because I have never seen a turnover with banana. I kept reading on…puff pastry, Nutella, peanut butter, cinnamon sugar…..AHHHHHH! I am sold! haha. This post is dedicated to one of my favorite bloggers Lindsey (Gingerbread Bagels). She is always using Nutella (side note: I seriously love reading her blog she has the most amazing desserts, EV-ER) and I keep telling her that I am going to use it, but never have. I finally am!

You ready for this?

Ingredients for Nutella Banana Turnovers:

  • 2 squares/sheets of puff pastry (1 package)
  • 1 egg
  • 2 tablespoons water
  • 1/2 cup Nutella
  • 1/2 cup Creamy Peanut Butter
  • 2 banana sliced (ripe)
  • cinnamon sugar

Preheat over to 450ΒΊ.

Roll out the thawed dough. Cut into 4 squares (1 sheet = 4 squares). Set aside onto a parchment paper lined baking sheet.

Beat egg and water together until mixed and then set aside.

Mix Nutella and peanut butter together. Place about a tablespoon (or a little more πŸ˜‰ ) of the mixture onto the squares and spread, being careful not to get to close to the edge with the mixture. If you do, the mixture might have a tendency to come out of the sides when you attempt to fold.

Place 4-5 slices of the banana onto the Nutella and peanut butter mixture and lightly sprinkle with cinnamon and sugar (yeaaaaa that’s what I’m talking about!).

Using a brush, lightly brush sides of the pastry with egg wash. Please be careful not to use TOO much of the wash. You just want to put enough on the edges so that it will seal. Fold over to make a triangle and press sides together with a fork to get a nice tight seal.

Brush the top of the turnovers with the egg wash and then sprinkle cinnamon sugar on top. Also, cut a small hole into the top of the pastry. I just took a fork to the top once and that worked out beautifully.

Put them into your oven for about 13-15 minutes. Make sure to keep your eye on them because the oven is rather hot. Most of you bakers out there know that a lot of ovens cook differently. The recipe called for 15 minutes, but mine were perfect at 13 minutes. Just keep your eye on them!

The filling is going to be SO hot when it comes out of the oven so please let these beautiful turnovers rest for about 15 minutes before you go your absolute NOMNOMS-cookie-monster frenzy on them. πŸ˜‰

These turnovers came out of the oven looking absolutely gorgeous! I had one of those moments when I opened up the oven and saw this:

I literally was so happy with myself haha. Ask Tino, he will attest to that. Whenever I do anything that I am proud of myself for…I get this goofy face. Sure does make me feel good though when I do something that I am proud of haha. Thanks for putting up with such a strange girl Tino, MUAH!

After these pretty things cooled off for a bit, I topped them with whipped topping and some additional cinnamon and sugar (just for good measure).

Can you blame me for being so excited about eating these?!! WOW, what a treat this was after my hard work for 14 days haha :-). They were flaky and crunchy but had such a creamy texture from the filling. Awesome…seriously one of the best things I think I have ever made.

Happy Monday Everyone! πŸ˜€
