Holiday Shopping & Cookies

The Christmas shopping has commenced! I really like to get a head start on shopping for Christmas…it makes me feel so much better to be done a few weeks before Christmas and then all I have to do is wrap. Makes the holiday season so much less of a pain and so much less stressful! I am not a shopper…I know, I know. I am a girl but I just do not enjoy the crowds and the staying out for hours shopping, BLAH! I mean, I like presents ;-)…but I am by no means a “shopper”.

Anyways, so this weekend I went to Yankee Candle to get some gifts for the women in my life. They always like the little knick knacks and candles that I normally consider clutter haha. I was able to get some really nice things for pretty reasonable prices (which I love, I may not be a shopper but I am bargain shopper).

After a long day of shopping, I came back to my house and sat on the couch contemplating what I could do. Cookies! Cookies will always make your day a little brighter…especially after the mobs I encountered while shopping…eeeek!!

Ingredients for Chocolate Chip Cookies:

  • 1/2 cup unsalted butter plus 1 tbsp, softened
  • 3/4 cup light brown sugar
  • 1 large egg
  • 3 tbsp light corn syrup
  • 1/2 tsp pure vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup semisweet chocolate chips (use more if you like πŸ˜‰ )

Preheat your oven to 350ΒΊ

Mix together your butter and sugar with a mixer on high-speed for 2 minutes until light and fluffy. Beat in the egg, corn syrup, and vanilla. Add flour, baking powder, and salt (I find if you mix the dry ingredients to the side and then add to the mixer it gives a better texture). On low-speed mix the dry ingredients into butter mixture. Then add the chocolate chips (I used dark chocolate).

Cookie dough = Heaven

Now, to all of you who are not big fans of corn syrup…I agree. I am not a big fan either. I seldom cook with it, but I don’t think a little bit every now and then is going to hurt you. Especially when it comes to baking certain things. It is very important in some recipes.

Space the cookies about 1 inch apart on your cookie sheets…

Place in oven and cook for about 15 minutes, until the edges start to brown. The edges will start to brown on these cookies MUCH sooner before the middle. So, make sure you take them out when the edges are brown because you need to let these cool ON the cookie sheet for 3 minutes before you transfer them to a cooling rack. I promise they will be done after 3 mins on the sheet!

These cookies were chewy and soft. Which is JUST the way that I like them. They were crisp on the edges but soft and delicious on the inside. YUM! or should I say NomNoms! πŸ˜‰ This recipe yielded about 30 cookies for me. I know the recipes always say they only make 2 dozen. Somehow, I always end up with more.
