Apple Flax Muffins
Did you know that February is American Heart Month?!
I have teamed up with American Recall Center to bring you some recipes and awareness this month for your ticker.
Heart disease is the #1 cause of death in America and I would like to share some tips on how to get healthier and also provide some yummy recipes too!
Today I am sharing a Flax Meal recipe and did you know that Flax Seed and Flax Seed Meal are good for your heart?!
There are full of Omega-3 fatty acids, fiber and phytoestrogens. Which is great for you!
Ground flaxseed hides easily in all sorts of foods — yogurt parfaits, morning cereal, homemade muffins, or cookies.
And since there are a few more days until Valentine’s Day, I thought I would share this “heart” healthy recipe with you today! (I love a good pun)
I am just happy that the snow is over and the hubs is coming home today!
He has been gone for over a week to Germany and I am happy to have him back.
Especially right before we go to meet our puppy’s mama!

I have been talking about it a lot recently, but I am just overjoyed that we are going to have an addition to the family!
Perhaps it is only a furry addition, but still.
My mom probably would prefer a different kind of addition to the family but that’s for another time 😉
Actually, I cannot believe how many people have asked us when we are having kids.
I mean IMMEDIATELY after we got married, I even got questions about it AT THE WEDDING.
First we got, “does it feel any different to be married?” and then it was “soooo, when are you having babies?!”
Good lord people.
Could we talk about this for a second?
Why is it that people have so many expectations for married people? Or just people in general?
There is all this pressure to do what you are supposed to.
I would much prefer people to do what makes them happy.
If that means having babies, awesome!
If that means quitting your job to be an artist, sweet!
I don’t care what it is, but I think that people should be doing what they want because they want to. Not because others expect them to.
Anyways, I made these heart shaped muffins because I thought they were super cute.
AND, they were easy and pretty tasty!
I am always looking for ways to make things tasty, but healthy.
I am NOT a low carb person perse.
I tend to watch them, but I don’t ever not eat them.
Quite frankly, I work out too much to not have carbs.
And?
They are good haha
But, I do realize that carbs can be eaten too much and that can be detrimental to the waist line, so I am always looking for ways to make things have fewer carbs but don’t taste like cardboard afterward.
I had never seen a muffin like this one.
Made with flax seed meal as the flour.
I was intrigued.
After making them and trying them…
I think I would make a few changes. I think that I would reduce the amount of liquid in the recipe. Perhaps take the 1/2 cup water out.
I also found that the original recipe called to cook the muffins WAY shorter than they needed.
Because of the flax meal, if these muffins aren’t cooked long enough they can be kind of slimy. Which is really nasty.
However, once I got this one right…
They were super yummy!
I hope you enjoy them as much as I did and also make them into heart shaped muffins like I did 😉

3-my family is the opposite. Literally no one has been asking when Michael and I are gonna have kids-they ask when we’re going to get a dog (the answer is never. I like dogs but we have allergies so…)

Haha, I am tempted to say never, but you never know. I think I may want kids eventually, but we JUST got married. I want to travel and enjoy him before we even think about having kids. I still have the opinion that they would ruin what we have going on haha, until I decide they will add to our life. We will be child-less for a bit 😉
