Pumpkin Spiced Latte

We are official one month away from my wedding. Well technically 29 days today…

AH!!

I would like to take a moment and thank caffeine for getting to me where I am now.

Without it?  I am not quite sure that I would be alive at this point.

No joke.

Something about Fall though…makes me happy.

SO happy!

I love leaves, the cool weather, the going back to school (even though I have been out of school for yeaaaars). Wasn’t going back to school so much fun! Well for like a week, but still the back to school shopping and all that jazz!

I also love Halloween and Thanksgiving. Thanksgiving has to be one of my most favorite holidays.

Something about it reminds me of family and feeling loved and safe and warm.

Pumpkins, apples, cinnamon, cider.

I just love Fall.

Probably why I am getting married in the Fall.

It will be even BETTER now because it will have my wedding anniversary attached to it 🙂

Anyways, if any of you follow me on Instagram, you know that I have been obsessed with pumpkin lately.

Pumpkin pancakes, waffles, muffins, yogurt, coffee. Everything.

I. heart.pumpkin.

So good.

Today, I am going to share with you a heart warming cup of espresso I made for myself.

My own version of a “Pumpkin Spiced Latte”.

Because let’s face it the versions at DD and Starbucks? They are loaded with crap, and sugar, and who knows what kind of chemicals.

This was super easy to make and completely delicious!

Pumpkin Spiced Latte

Super easy and delicious for this Fall season!
Ingredients
  • 1/2 cup brewed coffee or espresso
  • 1 cup vanilla unsweetened Almond Milk
  • 2 tablespoons 100% pure pumpkin puree
  • 1/2 tablespoon cinnamon
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon vanilla extract
Instructions
  1. Brew your coffee or espresso.
  2. In a saucepan add milk, pumpkin and spices. Stir together and heat on medium heat until the pot simmers. DO NOT BOIL. Once pot has simmered, remove from heat and add in vanilla.
  3. Place into blender and blend ingredients together for about 1 minute or until light foam forms. You can also do this in the pot with an immersion blender OR you can do it with one of those fancy steamers on espresso machines.
  4. Place coffee or espresso into a cup and gently pour into frothed milk. Add cinnamon to garnish.
