Pad Thai

Happy Friday!!

Ok first off….really snow?? There is 2″ of snow where I work and guess how much I got at our house? ummmm about 13″ and the same at my parents place.

They are out of town for 2 weeks, so Patrick and I have 2 driveways to clean that have 13″ of snow on them and there is less than 2″ on the ground 20 miles away…really mother nature? Really.

Second off…

I have a question for all of you out there that are married/engaged…

Did people ask you when the wedding was like less than 12 hours after you got engaged?

Patrick and I have now been engaged for 2 full days.

I cannot tell you how many people have come up to me asking me what the date was for the wedding.

Um…

Well, considering Patrick and have been engaged for a whole ::looks at watch:: 20 hours, I am not sure exactly when it will be…

???????

I mean goodness gracious can’t we enjoy the time of being newly engaged for you know, a little while?

Patrick and I have talked about when we want to have the wedding, it will most likely be Fall 2014. That gives us some time to finish up a couple odds and ends at the house before we  get into planning everything.

You know what else I have noticed?

How judgmental people are about everything.

People were actually questioning the day of the week that Patrick proposed…

“On a Tuesday? Really?”

I’m sorry did I miss something here?

Is there a rule/guidelines ‘getting engaged’ book that I missed out on reading someplace? How to Get Engaged for Dummy’s?

I had no idea that you were supposed to get engaged on the weekend. Like what the hell people haha

All things considered, I am thrilled. I don’t care that he proposed to be on a Tuesday, I think it was perfect. And no one is going to tell me different.

After all, I was the one who said “yes”, so I think that my opinion is the only one that matters ;-)

I tried my hand at Pad Thai this week.

I have always been a fan of Thai food. It is so delicious, but oh my word some of the dishes….talk about making you feel bad about eating out!

I decided to attempt to make Pad Thai with all the flavor but fewer calories. I will admit that it doesn’t exactly like the Pad Thai you get at the restaurants, but it was pretty darn close!

It was tangy but also a tiny bit sweet and hearty with all the vegetables. I made it vegetarian, however you are more than welcome to change it up with shrimp, chicken or whatever suits your fancy. :-)

An easy version of Pad Thai
Ingredients
  • 4 ounces uncooked wide rice sticks (rice-flour noodles)
  • 1/4 cup cider vinegar
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons water
  • 1 teaspoon red curry paste
  • 3 garlic cloves, minced
  • 1 1/2 cups chopped reduced-fat firm tofu (about 8 ounces)
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground red pepper
  • 1/8 teaspoon black pepper
  • Cooking spray
  • 1 cup chopped onion
  • 3/4 cup chopped broccoli
  • 1/2 cup chopped carrot
  • 1 large egg, lightly beaten
  • 1 tablespoon fresh lime juice
Instructions
  1. Place noodles in a large bowl. Add boiling water to cover; let stand 10 minutes or until tender. Drain.
  2. Combine vinegar, soy sauce, sugar, water, curry paste and garlic into a small bowl and stir together with a whisk well. Set this aside.
  3. Heat a large nonstick skillet coated with cooking spray over medium to high heat. Sprinkle the tofu with salt, pepper and ground red pepper. Add the tofu to the pan and sauté for about 8 minutes or until the tofu starts to lightly brown. Remove from the pan and set aside
  4. Add onion, broccoli and carrot to pan. Cook until your degree of tenderness is reached. I cooked it for about 5 minutes, until the vegetables still had crunch but were very bright in color. Remove the vegetables.
  5. Add egg to the pan and stir fry for about 20 seconds, soft scrambled is the desire here. Stir constantly.
  6. Return tofu and onion mixture to pan. Stir in noodles and vinegar mixture. Cook for about 1-2 minutes until heated throughout. Stir in lime juice and serve hot. .

    You nailed it Raven: the point was that Patrick wanted to surprise you in a romantic way. Tuesday evening after yoga was obviously perfect as you were obviously surprised. Duh.

    Isn’t it amazing what people think is their business? And you’re only just getting started. Be prepared for criticism (either to your face or behind your back) on your choice of venue, music, food, cake, dress, color scheme and hair style. You’re going to need to grow a thick skin and feel free to tell people to buzz off. Or…elope! 😉

    LOL… as soon as the wedding bells ring… people will be asking about when the kids are coming. I love that Patrick proposed on a Tuesday…. I’m still thinking how sweet it all was. My proposal was nice… but nothing like that. It was typical and expected and not a surprise. I love that yours was a sweet surprise. Now enough about the engagement… it’s old news after only a few days. Kidding. :0 ) I do want to drool a little bit about this Pad Thai. I have been wanting to this dish for a while now. This looks great. 🙂 I love all the spicy flavors and colors you have here. 🙂
