Happy Halloween!

First of all, any and all of you who have been affected by Hurricane Sandy. My heart and prayers go out to you.

Here in CT we didn’t get hit as badly as we did last year, thank goodness. I am not sure we could have taken 2 years in a row with so much damage from all the storms we have had.

Please be safe! There are a lot of crazy things happening right now so just make sure you stay safe and smart.

Can you believe that it is Halloween already?

I can’t. Thanksgiving is going to be right around the corner and I then Christmas will be here!! I haven’t even begun to think about my Christmas shopping.

I think I am getting ahead of myself though.

It has become somewhat of a tradition of mine to make cookies on Halloween. I have done it for 3 years now I think. They are just too much fun.

You can make them scary and use all sorts of dark colors. I just love it.

Not to mention, who doesn’t love a cookie on Halloween?

Or just a cookie in general really haha.

Anyways, the recipe I use can be found here. I use the same sugar cookie and royal icing recipe all the time. I have made all sorts of different kinds of cookies with the same recipe. So have fun with it!

It is fantastic and it never fails me. Especially the cookie recipe. I love it because you don’t need to refrigerate before rolling out the cookies.

I am all about getting more done is a short amount of time because my life is pretty fast paced. So any recipe that takes less time and tastes great? Sign me up!

Sugar Cookie: (adapted from recipe)

  • 227 grams unsalted butter (2 sticks plus a 1/2 a tablespoon)
  • 175 grams confectioner’s sugar
  • 1 egg {room temperature}
  • 2 teaspoons vanilla extract
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 400-425 grams all-purpose flour

Leave your butter out about 2-3 hours prior to making this dough. It will help you, I promise.

Preheat oven to 400º.

Cream you butter until it is light and smooth. Add in sugar slowly since it is confectioners sugar. Otherwise you will have one big old mess.

Add eggs and the vanilla and mix well.

Sift together your flour, baking powder and salt. Add this to the wet mixture a little at a time until all of the dry ingredients is well incorporated. You have have to use a spatula to scrap down the sides to make sure all the flour is incorporated.

Divide the dough in half and roll out one 6″ round into about 1/4″ thickness. Cut the desired shapes for your cookies

Bake cookies for about 7-8 minutes on a cookie sheet lined with parchment paper, you do not want them to brown. Remove from sheets and let sit for about 2-3 hours before you start to decorate.

Royal Icing:

  • 8 cups powdered sugar
  • 5 tablespoons meringue powder
  • 12 tablespoons water
  • 1 tablespoon pure vanilla extract
  • Food coloring of choice

Add the sugar and meringue powder together and mix until combined in mixture. I would advise sifting the sugar at least 2 times before you begin.

Add water and vanilla and beat for 10 minutes or until the icing has lost its shine.

I piped the outline of the cookies first with a #3 tip (consistency of toothpaste) and then let them set and then flooded the cookies by adding water into the icing so it becomes a little runny (consistency of shower gel).

Very cute, very simple (a little time consuming, I will admit) and everyone loves them!
