Chocolate Chip Cookies

Good Thursday Morning to everyone!

How is your week going thus far? Mine has been going rather quickly actually. Can’t complain about that! Makes the weekend come faster.

Ever heard of Christmas in July?

Well I got Christmas in August.

I would just like to say that I have the best boyfriend in all of the land (ok, yes I did just say “in all of the land”, but maybe that is because he make me feel like a princess πŸ˜‰ ).

He found this sale on Onieda.com. Holy frekkin’ moly! Talk about getting things for dirt cheap. He is such a good deal finder. Just like me actually haha.

We are very careful with our money so that we can spend it on things we want, we ended up getting like 8 or 9 boxes of new kitchen stuff sent to us for like $100 bucks and it was free shipping. I mean literally 8-9 larger boxes.

I mean from plates, to utensils, to pots and pans, storage containers for food, cake stands, you name it. They had it on sale.

We got A TON of great containers for the new kitchen that we are going to have. I love having organized things. It is a sickness really. I mean like love organization.

Patrick always makes fun of me for it, but I’ll tell you what, it helps me keep my life in order. Otherwise I would be all over the place…and just something about marking something out on a list makes me feel so good. πŸ™‚

Anyways, so not only did we score big time on the kitchen stuff but guess what?? (no, not chicken butt Patrick)

Patrick bought my a KitchenAid Mixer with the glass bowl and it is candy apple red. AHHH!!!! I cannot even tell you how excited I am about this.

I told him not to buy it, seeings how we just bought a house and all haha. He went ahead anyways!

I have watched my mom with here KitchenAids since I was a little girl and now that I am going to have one of my own?? I am just beyond ecstatic.

Needless to say, I am completely spoiled.

Somehow I think that is exactly how Patrick wants it to be though. He seems to spoil me every chance he gets.

I am taking him out to dinner tomorrow night to thank him for all the goodies.

Think about it though…think about all the amazing things I am going to be able to share with you now that I have that amazing mixer.

Like these cookies!

Chocolate Chip Cookies are a staple. I think that it is one of those cookies that just about everyone likes and it can be made in SO many different ways.

It is like going to a Dave Matthews Band Concert. You may have gone 15 times before, but I guarantee that the 16th time isn’t like any of the others. Any of you who have actually been to DMB, know what I am talking about πŸ˜‰

Adapted from this recipe.

Ingredients:

  • 1 cup, or 2 sticks, salted butter – room temperature not melted
  • 1/2 cup sugar
  • 1 1/2 cup packed brown sugar
  • 2 eggs, room temperature
  • 1 teaspoons vanilla extract
  • 12 oz all purpose flour
  • 3/4 teaspoon small-medium coarse sea salt
  • 1 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 2 1/4 cup semi- sweet Ghirardelli chocolate chips

Preheat oven to 360Β°

Cream butter, sugar and brown sugar until it is nice and fluffy. This takes about 3-4 minutes. Make sure it gets to a fluffy consistency before you continue.

Add both eggs in and vanilla and beat for additional 2 minutes. Add baking soda, baking powder, salt, and flour until cookie batter is well combined.

Add in your chocolate chips until they are well distributed throughout the dough. (resist the need to eat half the batter – I failed at this)

This cookie batter is thick. Drop about 1 tablespoon of dough onto a baking sheet that is lined with parchment paper. The original recipe called for 2 tablespoons and that was a HUGE cookie.

Bake for 10-14 minutes or until the edges are nice and brown. Keep on the cookie sheet for an additional 2 minutes after you remove from the oven and then pick the parchment paper up off of the cookie sheet and transfer to a cooling rack.

Let the cookies cool and then serve!

I will say that these cookies came out rather thin, and normally thin cookies are crispy and I am NOT a crispy cookie fan. Gooey and chewy is my cup of tea.

I was pleasantly surprised to find that these cookies while thin, had a chewy texture on the inside. I wouldn’t say that this was the best chocolate chip cookie I have ever had, but it was good enough to share with you all.

Like I said there are so many different variations of the chocolate chip cookie, we could make them all day and still come out with 12 different kinds of cookies.

Oh and I love my outfit today. Loving the colorful skirts right now.

I love dressing them up with button down shirts to make them look a little classier for work.

That way you can still have fun, but you aren’t dressing TOO crazy for work.

You can get skirts like this at like Charlotte Russe for super cheap. I think I got a couple of them for like less than $10 each.

There is that finding deals again πŸ˜‰
