Banana Spice Muffins
Man, what a tornado these past few weeks have been.
Most of you know that Patrick and I have been working to get ourselves our first house. We had our home inspection on Monday afternoon.
Overall things went pretty well, here and there things that have to be taken care of…but that is a house right?
Our major concern was that the inspector said that the roof needed to be replaced. Knowing that the seller was going to be paying all the closing costs, we knew this was going to be a battle.
We thought we would start at the beginning and send in a unsatisfactory inspection form to the sellers asking for them to pay for the new roof before closing.
And guess what?! No, not chicken butt Patrick. The seller agreed!
No negotiations, no nothing. Just OK, we will pay for the roof and the closing costs.
Making me feel like this house is meant to be. Keeping our fingers crossed that everything goes smoothly you know??
Today I am going to share with you a recipe that I found for bananas. I feel like we get bananas and then they all get to the point where I like to eat them, where they have the spots on them, and in order to get all of them eaten before they turn ready for banana bread you need to eat them in like 1 day haha.
My mom likes bananas when they are green and you can drive them through a 2X4. ICK!
So this was to use up some bananas that were a little too far gone for me taste.
Adapted from this original recipe.
Ingredients for Muffins:
- 2 1/2 cups all-purpose flour
- 1/3 cup granulated sugar
- 1/3 cup packed brown sugar
- 1 tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 teaspoon ground ginger
- 1 cup mashed ripe banana (about 2 small)
- 2/3 cup skim milk
- 1/3 cup low-fat buttermilk
- 1/3 cup non-fat cottage cheese, pressed to get all the liquid out
- 2 tablespoons vegetable oil
- 1 tablespoon vanilla extract
- 1 large egg white
- 1 large egg
- Cooking spray
Preheat oven to 400°.
Make sure to get all the moisture you can out of the cottage cheese. You don’t want any of the watery portion.
Combine first 8 ingredients in a large bowl, and make a well in center of mixture. Combine banana and next 7 ingredients (banana through egg) in a bowl, and add to flour mixture. Stir just until moist. Spoon batter into 18 muffin cups coated with cooking spray.
Bake at 400° for 18 minutes or until done. Remove from pans immediately, and cool on a wire rack.
These muffins probably have about 100 calories a piece. I changed a few ingredients to meet what I had on hand.
I know I have been slacking on my posting lately. Please forgive me! Between work and the house and softball starting along with kickball starting AND the show for my dance company coming up…I have been a litttttttle busy.
Have a great rest of your week!

Congratulations on all the success you’re having with your new house 🙂 Also, these muffins look great – I love my bananas the same with, with slight brown spots on them and just like your mom – – my mom loves them a little green, with a crunch (it gives me a tummy ache!!)
I’ll sure be making these soon though.

These look delish! Banana bread is always a favorite in my house and I’ve got a dozen or so ways to prepare it, but this needs to go on my list! Congrats on the house, I have a feeling I’ll be going through that whirl-wind soon too.
RavieNomNoms
Yes same here Melissa, banana bread is always a winner in my house. I think everyone has a couple different ways they like to prepare it. It is definitely a whirl-wind, but a good one 😉
Tina@flourtrader
Glad the house thing is going well, I know you will be more relaxed though when you are all settled in.
Your recipe here is unusual with the three kinds of dairy, but it looks like it worked wonderfully. They look so moist and tasty.
With the springtime, we do find ourselves more busy than usual and it sounds like you are doing some fun things! Until next time…
RavieNomNoms
Thank you Tina! Yes, I am sure I will be more relaxed once we get settled.
Kita (@passthesushi)

So glad the house seems to be coming through!!!
Love banana muffins. I”d love to do these with some chocolate chips and walnuts. 🙂
RavieNomNoms
Thanks Laura! Yes, adding some nuts would have been great. If Patrick didn’t hate them so much haha. I should have done a 1/2 batch with and without
Ramona
Wow.. the seller agreed to get the roof done!! That is fantastic! Can I say my mouth fell open when you said that it had to be done…. holy cow that would have been some $$ if you had to do it yourself. It’s much better to save your money to fix the inside up so you can get your home looking the way you want it to. I love hearing the progress of your house story…. keep them coming. 🙂 Okay.. onto these fabulous muffins. I am there with you about bananas going mushy way too quick. This is one great way to use them up! 🙂
RavieNomNoms
I know that is the best Ramona, having that extra money upfront to be able to do things that we want to it. I really hope that everything continues to go smoothly like this so we can do those extra things like buy furniture! haha
Baker Street (@bakerstreet29)
Woot! So glad to know everything is falling in place. I love banana muffins. Its comfort food at its best.
RavieNomNoms
Thanks so much! Me too!
Emily @ Life on Food
That is great news on the house front. I hope things keep working out for you so well. I like maybe not green bananas but once they are yellow I am pretty much through and my husband takes over.
RavieNomNoms
Haha that sounds like how it is in my house Emily. There is a certain point that I won’t even touch them until.
Liz Berg (@ThatSkinnyChick)
I’m like your mom…I love my bananas to have a touch of green 🙂 But when they get spotted, I will turn to your recipe to make these wonderful muffins!
fatpiginthemarket
Sounds like the house acquisition is going well. Maybe the next time you make these you’ll be chilling in your new kitchen! I like the cottage cheese in your recipe. Never tried that in a baked good and now I’m gonna have to do so.
Megan @ Pip and Ebby
Good luck with the house stuff! That can be so stressful, but when its YOURS it will be sooo nice! Keep that in mind!! These muffins look wonderful! They LOOK moist, which is kind of crazy. YUM.
Viviane Bauquet Farre
Keep having fun with the new home! It is such hard work but ever so rewarding. Delicious muffin recipe, too!
Jean (Lemons and Anchovies)
Congrats on your beautiful new home (saw a pic in your earlier post). You guys totally scored on getting the seller to cover the cost of the roof–great job! I love banana-flavored everything so these muffins are right up my alley.
Amber
I hope that everything continues to go well in your search for a house!
Love your muffin recipe! I found it surprising to see cottage cheese in the list of ingredients. I’ve never added it to muffins before. Definitely willing to give this recipe a try sometime soon!
Emily @ She Makes and Bakes
I love the spices in the muffins. Good luck with the house!!

Adding cottage cheese to muffins sounds interesting. Could you taste it at all?
