Black Bean Brownies…say what?
First off thanks so much everyone for the Top 9 today for my White Turkey Chili! I really appreciate all of your support. 🙂
What a terrible week for my Alma Mater :-(. I am so shocked and mortified by the actions of Jerry Sandusky. However, this doesn’t change my love for my Nittany Lions. We are a strong University and I know that we will come out better than before after this horrible tragedy.
My thoughts and prayers are with JoePa and his family as well as the families who were affected by this horrible tragedy. After all JoePa has done for the college and the students…this is such a heartbreaking way for him to have to leave his post as head coach at PSU. I still love you Penn State and will bleed Blue & White, forever. All the tradition and pride that comes along with being a Nittany Lion is unchangeable. PSi♥U
Enough of the depressing stuff huh? Onto the main event…
I know some of you are looking at the title of this post and are scratching your heads. “Black Beans? In brownies, Raven?”…yes sir! Black beans.
I have to say that black beans are probably one of my most favorite foods. They can be used in so many different ways! In soups, Mexican foods, as side dishes, as dips! And nowwww in desserts. I know I know…it sounds weird. Let me tell you something though, they.are.awesome.
These brownies were so delightfully chocolatey and rich. You would never think that they had vegetables in them. For all of you skeptics out there, try them. I promise you won’t be disappointed!
Ingredients:
- 1/2 cups canned black beans, drained and rinsed
- 1/4 cup black coffee, strong
- 1/2 cups butter
- 4 oz bittersweet chocolate
- 4 large eggs
- 1 1/4 cup white sugar
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1 cup whole wheat flour
- Cooking Spray
(I adapted this recipe from a lot of other recipes that I saw online)
Preheat oven 350º.
Coat a 9×13″ pan with cooking spray. Make sure and coat it really well. Don’t want those brownies to stick.
In a food processor, process beans and coffee until smooth. Set this aside for later.
In a small sauce pot, or double boiler, melt butter and chocolate together over very low heat. Make sure to not overheat the chocolate, you don’t want it to burn.
In another medium bowl, beat eggs and sugar until light and fluffy. With mixer on low speed add the chocolate in to eggs gradually. Incorporate well. Add the black bean mixture, vanilla and salt. Add in flour and combine well on low speed.
Pour the batter into your greased pan and cook for about 25 minutes in the oven or until a toothpick can be inserted into the center of the brownies and comes out clean. Let the brownies cool in the pan on a wire rack.
Cut into 24 pieces and serve!
The texture of these brownies was very light and airy but also very rich at the same time. I was so pleasantly surprised. It is a must try. Also these brownies are pretty good for you and I swear you cannot even tell! Can’t beat that huh??

I have heard about these, but have never tried them. I like chocolate and I like the beans, so I am sure it would be a healthy alternative. The best part is that you do not taste the beans, only the chocolate. Well worth a try.

Black bean brownies are the best! I make mine flourless, and love to add some spice to make the “Mexican” Black Bean Brownies. No one believe me until they try them, but you really don’t taste the beans at all!

I have gone back and forth on this Rachel, I understand why they did. However, if they are going on the assumption that they are firing because “they knew ” about the situation than many more have to go. I only want what is fair. I wish that JoePa could have finished out his season, very much. That is what he deserves.
