Caprese Wraps
Whenever things are rough in my life I really try and focus on the good. That is all you can do right? If all you do is focus on the negative (which I am guilty of sometimes, I’ll admit) you will end up feeling hopeless and completely powerless to do anything to make the negative go away.
So that is what I have been trying to do for the past few days, focus on the POSITIVE!
I have a fantastic boyfriend (score)
I have a family who loves me <3
I have a the cutest darn bunny who has the best personality (come on, how cute is he?)
I have a job, even though I am not thrilled with it right now. At least I have one right? Some people don’t and I should be grateful that I get a paycheck.
I have amazing friends…
and I have my blog…
I had no idea when I started this blog that it would become such a large part of my life, but I am SO glad that I started it. I have “met” some really incredible people since I have started this blog and that is truly something to be happy about. Everyday I am amazed at the kindness and support I get through this blog. Sometimes people ask me why I started it and you know I really don’t think I could pinpoint exactly why I did, but it has been one of the best experiences for me. Thank you to all the people I have gotten to know over the past year for your endless support and positivity. Means the world to me!
This is a day of reflection…and caprese wraps!! haha
Ingredients for Wraps:
- Whole wheat wrap
- Tomatoes
- Lettuce
- Basil
- Fresh mozzarella cheese
- Italian dressing (not the creamy kind)
Line your wrap with lettuce and basil. Drizzle about a teaspoon of dressing onto them. Add your tomatoes and then mozzarella.
Roll your wrap and cut in half and enjoy!
It is just the simple folks!
Now if you’ll excuse me…I need to go dance my socks off at Kristin’s wedding! 🙂

You are a lucky girl – job woes notwithstanding. Life is never perfect but those of us who are happiest understand how not to sweat the bad stuff and keep focused on the positive and you are lucky enough to have a lot to be positive about. One thing we’re positive of is that you have the cutest bunny!!!! We are also positive we love Caprese and it’s a great idea to make it into a wrap. Lovely dish and inspirational post!

I am a HUGE advocate of gratitude! In today’s world, it’s so easy to focus on the things we “don’t have” without realizing all of that we do have. Love your outlook in this post… and the wraps… and can’t wait to see some dancin’ pictures! 😀
