Fruit and Oat Bars
I am off and running to Virginia and West Virginia this rainy week for work. Lots of customers to see and try to sell things to haha. It was soooooo nice to have a long weekend! Always good to have a long weekend, but it always feels like they go faster than the normal weekends. AmIRight? I am already looking forward to this weekend where I am going to Penn State to visit with Tamara and show Patrick around. Getting more and more excited about it as the days go on! YAY! 😀

Anyways, this recipe I am sharing with you is a new experiment. I made these fruit and oat bars this weekend and they were pretty tasty and healthy! I wanted to make sure my lion was taken care of while I am gone this week. He loves to have things to snack on 😉
Ingredients for bars:
- 1 egg
- 1 egg white
- 1 cup light brown sugar
- 1 tablespoon canola oil
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 1/2 cups toasted oats
- 1 tablespoon whole wheat flour
- 1/2 cup natural creamy peanut butter
- 2/3 cup dried cherries
- Cooking Spray
Preheat oven to 350º
Spread oats on a baking sheet or dish and bake, stirring occasionally, for 15-18 minutes, until lightly brown and fragrant.
Reduce temperature to 325º. Line a 8×11 baking pan with foil. Lightly oil or coat with nonstick cooking spray.
In a large bowl, whisk egg, egg white, brown sugar, oil, cinnamon, salt, and vanilla extract. Make sure you get this combined well. Stir in oats, flour, peanut butter, and cherries.
Spread in the prepared baking dish and bake for 30-35 minutes or until brown. Cool them completely on a wire rack in the baking dish. Then cut into bars with a lightly oiled knife.
The texture of these is what I enjoyed most. It was kind of a cross between a cookie and a bar and bread. You know me, I like chewy things so these were just perfect for me.
Best part about these bars? They are healthy and they only have 130 calories a piece, good deal right??
