Rainbow Sprinkle Donuts

I did it!! People I did it! Finally, I have been talking for months and months to so many of you about how I wanted to make donuts and I finally did it! Thank goodness I made them before the hurricane came through my town though. We have been without power now for 3 days. Which means, no cooking and no showering :-(. My sweet lion was nice enough to let me come over and get a shower in yesterday…thank goodness for that!

This is what it looked like on either end of the street I live on…trees are down everywhere in the Northeast. From the sounds of it, the town doesn’t plan to get those trees cleaned up for 10 days which means we have a lot more days without power coming. There was no damage to the house, which was a very good thing. The apple tree on the side of the garage split, but that wasn’t such a bad thing because it needed a trim anyways hehe πŸ˜›

Besides not having power, we were all pretty lucky. From some of the images I have seen along the coast, I have nothing to complain about. I am just glad everyone I know is safe.

I was able to get some really nice pictures of some flowers during the storm though. I love pictures of flowers with water droplets on them. Always been one of my favorite things. Some thing about the way you can freeze a moment in time like that is amazing to me. I have always been somewhat obsessed with pictures though. Even when I was younger I was always playing with cameras, whether it was a fake one or a real one πŸ˜‰

Anyways, let’s get onto the donuts shall we?!

First let me say that this took me 2 tries…the first batch of donuts I made came from This Recipe on AllRecipes. This recipe was anything BUT fluffy. These donuts came out more like dense pancakes in donut form. I would NOT suggest making this recipe, but I wanted to at least share that my first attempt at the donuts was a complete and utter fail.

The following recipe is the one I used which I adapted from this King Arthur Recipe:

Ingredients for Donuts: (Makes 6)

  • 1 cup unbleached pastry flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 3 tablespoons vegetable oil
  • 2 tablespoons buttermilk

Preheat oven to 375ΒΊ

Whisk together flour, sugar, baking powder, nutmeg, salt, and cinnamon. Make sure you really try to incorporate some air into the dry ingredients.

In a mixing bowl, beat the eggs, oil and buttermilk until it is foamy. Now, I got a lesson on this from my mother. Foamy…meaning, beat on high speed for about 1 minute until bubbles start to form and you can see them on the side of the mixing bowl.

Pour the liquid mixture all at once into the dry and stir until just combined. You don’t want to over work the batter.

Butter or grease your donut pans. I used cooking spray and when I say grease…I mean REALLLLY grease them, almost until it is dripping with spray. Those little yummy donuts will stick to your pans if you don’t. Trust me.

Bake the donuts for about 10-12 minutes or until they are brown on top and they spring back when touched lightly.

Remove the donuts from the pan immediately and let them cool on a rack. If you have greased the pan correctly you can just flip the pan over and the donuts will pop right out. Now it is onto the fun part…the glazing and sprinkles! hehe πŸ˜‰

Ingredients for Glaze:

  • 1/4 cup skim milk
  • 1 teaspoon vanilla
  • 2 cups confectioner’s sugar

Add milk and vanilla into a liquid measuring up. Place you sugar into a mixing bowl and SLOWLY add in the liquid and stir with a whisk. You want this to be slightly stiff and thick still. Runny glaze on a donut was not what I was looking for here. If you prefer it that way just add more liquid until you get the right consistency.

Take one of your cooled donuts and dip the top into the glaze and then dip the donut into a bowl that has rainbow sprinkles and make a circular motion to cover the top with colorful goodness. Put it back onto the wire rack to set.

Now I don’t know about you but sprinkle donuts remind me of being younger. I always reached for the vanilla sprinkle donuts. I was totally into them when I was a little girl ::looks around:: and don’t tell anyone, but I am still head over heels for them, shhhhhhh! πŸ˜‰

These donuts certainly did not last very long, especially with my biggest fan in the same house when they were made. Patrick gobbled this up with absolutely no hesitation. They must have been good because I got the mouth full “thefess are awepome” comment. πŸ™‚

The cinnamon in these donuts gave them a nice spice. I want to try and find just a regular vanilla donut recipe…if any of you have any suggestions or a recipe you tried out and liked it, let me know!!

Hope you are having a good week so far! Send some good vibes my way so that those trees get removed this week and that I get power again soon!
