Chocolate Chunk Oatmeal Cookies
Another weekend has come and gone…the golf tournament last week went really well. My team and I had a fabulous time golfing. We certainly aren’t what you would call “golfers” but we definitely had fun and played some decent golf.
Since I was the captain of the golf team I wanted to make sure that my team was equip with all the essentials. Music, booze, and cookies…hehe π
Personally, I was not a fan of how these cookies came out but everyone seemed to really enjoy them. I didn’t have any butter so I had to substitute Crisco in, which we all know changes the texture and flavor of the cookies. At least in my opinion it does. Also, I think I would have changed the amount of oats and sugar. Perhaps added more oats and less brown sugar. Either way, they seemed to be a hit with others so I wanted to make sure I shared them!
Ingredients for Cookies:
- 1 1/4 cups all-purpose flour
- 1 cup regular oats
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 3/4 cup packed brown sugar
- 1/3 cup butter, softened (I didn’t have any butter so I used butter flavored Crisco instead π )
- 1 1/2 teaspoons vanilla extract
- 1 large egg
- 1 cup chocolate chunks
Preheat oven to 350ΒΊ
Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, oats, baking powder, baking soda, and salt. Stir with a whisk to combine.
Place sugars and butter in a bowl and beat with a mixer at medium speed until well blended. Add vanilla and egg, beat until blended. Gradually add in the flour mixture, beating at a low speed until just combined. Stir in chocolate chunks.
Drop by the tablespoons 2″ apart onto baking sheets lined with parchment paper. Bake for 12 minutes or until edges of cookies are browned. Cool on pans for 2 minutes and then let cool on wire rack completely.

Yum and delicious and I usually try to use crisco in my cookies… less spready (if that’s a word) and more chewy!

Great cookie recipe! Crisco definitely changes things – I usually like to use 1/2 and 1/2. I like things thick and chewy, and I think Criso does that well.

Good for you and the golf tournament! I have only played in one. I took lessons for about 6 months beforehand and I was still terrible. But I had a blast!
