Jalapeno Turkey Burger and Baked Potato
Once again another week comes and goes my friends. Another busy week has come and gone and I must say, I am pretty exhausted. But I can’t be!! I have rehearsal tonight for the next show that the dance company is in. We have 2 shows Saturday and I am sure they will go extremely well, I just need to get some energy in the next few hours before I jet off to rehearsal. ๐
Do you ever have one of those days where you just want a meal that is super comforting and satisfying? I had one of those nights and I wanted to make something that was going to leave me completely and utterly satisfied a.k.a uber full. Normally those kinds of meals always involve meat and potatoes. I mean meat and potatoes, that is man shit right? Well, I took a spin on the normal meat and potatoes meal and decided to make a turkey burger and baked potato. I’ll tell you what, it didn’t disappoint.
Ingredients for Turkey Burgers:
- 1 lb lean ground turkey meat (I normally get the 96-98% fat free kind)
- 2 jalapenos
- 1 shallot
- 1 clove garlic
- salt and pepper to taste
- a dash of Worcestershire sauce
While your prepping your burgers place baking potatoes into the oven at 350ยบ and cook for about an hour or until you can poke a fork into the potato and it slides out without picking the potato up. Before I cook my potatoes I always poke holes into the skin. My mom always wraps them in foil with butter, pepper, and salt and they come out SO good, but I didn’t go that route this time.
Take your ground meat, salt, pepper, and Worcestershire work together. Chop your shallot and jalapeno and put into the meat mixture. Chill them in the fridge until the potatoes are almost through cooking.
I cooked these on the grill. They normally take about 8-10 minutes depending on the degree of doneness you want. Once everything is done dress your food how you choose. Personally, I cannot have a baked potato without butter, pepper, and chives (and maybe a small dab of sour cream if I am feeling adventurous haha). So that is just what I did! ๐
I really think the potato stole the show on this one. The burger was pretty fantastic but I was just so craving a potato so this was just what I was looking for! I hope you all have a fabulous weekend!
