Tomato and Basil Flatbread Bake
Hello my dears! It has been a while! I have been trying to catch up on all your yummy posts. You guys have been making some NomNom-tastic stuff! KUDOS!
I am getting settled down from my way too busy for comfort week last week. Things have been so out of the ordinary for me right now. Trying to stay as positive as humanly possible! Sometimes you get so busy that you forget to take time for yourself. This weekend was ALL about taking it easy and just relaxing. I was able to finish a book (Girls in Trucks), not the usual type of book I read but definitely a cute story. For any of you readers out there, check it out. It was short and sweet.
In other fabulous news…I reached my goal for the cancer walk!I have raised over $2,300 for the cancer walk and I am so excited!! This means that I get to walk in July in Boston! I cannot tell you how grateful I am to have so many amazing people in my life who have been SO supportive throughout this whole fundraising process. I am still going to continue to raise money up until the day I walk, but I just wanted to say thank you so much to everyone who donated!! ๐ XOX
In being so busy I have to confess that I have been slacking on my normal posts and cooking habits. I have missed cooking! This recipe I am going to share was a quick little treat that I made because I didn’t have much time and I wanted something that was going to make me feel like I had cooked a meal. These flatbread bakes are so simple, easy, and fast there is no reason not to try them! ๐
Ingredients:
- 2-3 cloves garlic, finely chopped
- 2-3 medium tomatoes, thinly sliced
- 1-2 large square wraps cut in half (I used Joseph’s Lavash bread – it is so good! You have to try it, makes excellent wraps)
- 2-3 tablespoons olive oil
- 7-8 fresh basil leaves, roughly chopped
- 1/2 cup low moisture part skim shredded mozzarella
Preheat oven to 350ยบ.
Take your lavash bread/flat bread/wraps and place them on a baking sheet. Place some of the olive oil in the center of the piece of bread and smooth it over the entire piece so that the entire piece is coated.
Take your garlic and sprinkle it over each piece of bread. Then place your tomatoes on the bread in whatever arrangement you choose. Sprinkle the cheese evenly over the pieces of bread and then put the basil on top of that. There you have it! Easy little flatbread bakes!
Place them into the oven for about 5-8 minutes or until the edges are brown.
These are so simple and so tasty! Easy dinner for a busy girl! ๐

Ohhh!!! Congrats on meeting your goal! You are truly amazing, Raven. I know what you mean about the busy schedule… I haven’t cooked a good meal in weeks, let alone had the whole family sit down to dinner. We were out of town for an entire week and I’m SO far behind!! (We did bring that trophy home though!!!! ๐ )
I love the use of the flat bread here. My friend uses lavash frequently, but I’ve just never picked one up. I’m on my way to TJ’s today to refill our bare fridge and will pick some up. The Farmer’s Market had some lovely tomatoes that I got last weekend, this would do nicely – husband is out of town and Liv has dance. All for me and my son!!
