Turkey Sausage Quiche

It’s Friday Friday…gotta get down on Friiiiday! Have you not heard this song?? If not check out Rebecca Black’s video here. Was like a huge internet sensation I guess haha. Pretty funny actually. I have this radio morning show that I listen to by podcast from Philly. For those of you who are from the Philly area, I love Preston and Steve!! I am so upset that I can’t listen to them live everyday, but I download the podcasts and listen every single morning. They are the ones who introduced me to this video haha. Fridaaayyyy! ::dances:: It is pretty horrible. πŸ˜‰

I can’t tell you how happy I am that it is Friday. Been a long week so I am ready for the weekend. Hopefully the weather will be great this weekend, I am tired of the rain now. Tired I tell you!! Sunday is supposed to be beautiful and I hoping that the scattered showers will stay scattered on Saturday and it ends up being sunny.

I am also SO ready for Hot Lunch tonight!! Woooooohoo get ready for some funnnn, hehe.Β  Can you tell I am excited? πŸ™‚

I love quiche. Have I ever told you that before? Well, if I haven’t. I heart quiche! You can make so many different kinds that it never leaves me bored with my food. Personally, I am crustless kind of quiche person, but I have had some quiches that are ridiculously good that had crusts. However, I think it is much easier to go without so I normally do. This is my *clean up* quiche. I used everything I had lying around for this one and it turned out great!

Ingredients for Quiche:

  • Cooking Spray
  • 2 teaspoons olive oil
  • 1 small shallot
  • 1 clove garlic
  • 1/2 cup red pepper
  • 2 cups broccoli
  • 1 1/4 cup skim milk
  • 1 cup shredded part skim mozzarella
  • 2 tablespoons fresh cilantro
  • 2 teaspoons dijon mustard
  • 2 low fat turkey sausage links
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg
  • 4 large egg whites, beaten
  • 2 large eggs, beaten
  • 1 teaspoon freshly grated parmesan cheese

Preheat oven 350ΒΊ.

Spray a 9″ pie plate with cooking spray. This is a crustless quiche so make sure you get every inch of the pan sprayed, you don’t want anything to stick.

Heat oil in pan and add onion and garlic that has been chopped. Saute for about a minute and then add the turkey sausage. Cook until sausage it starts to change color slightly. Take the meat mixture and place aside (you are going to cook it all the way through in the oven).

Add broccoli and pepper to the hot pan and cook for a few minutes until the broccoli is bright green in color, again you will cook it the rest of the way in the oven. Put the meat and vegetables into the pie plate and spread evenly.

In a bowl to the side combine the milk, mozzarella, cilantro, mustard, salt, pepper, nutmeg, and eggs. Mix together with a whisk until well combined. Pour the egg mixture into the pie plate over top of the vegetable and meat mixture. Sprinkle with freshly grated parmesan.

Bake for 40 minutes or until top is brown. Let stand for at least 5 minutes before serving.

I personally couldn’t wait the 5-10 minutes for the quiche to set up. I was so hungry I dug right in so the picture of my slice is a little soggy looking. I apologize, I couldn’t wait haha. It did taste fantastic though! I threw a little salsa on top and it made a great dinner!
