Triple Berry Scones
Just wanted to let you all know that the big presentation went really well on Wednesday. The staff seemed to be really impressed overall which makes me really happy. A lot of really big names in my company in that meeting, which is always a good thing right? Getting noticed by the big boys on campus. π
The big show is this weekend for Eclipse! I am really excited about it! Jenn, the director, has done such a great job with building the choreography and the concept of the show. The show is based on the idea that people are so connected to technology that they sometimes lack real human interaction. Let’s be real…how many times have you gone to a restaurant and seen 2 people sitting together at a table with their phones out texting and not even acknowledging that the other person is sitting at the SAME table! I mean, didn’t you go out to dinner to spend time with the person you are sitting with? I am totally guilty of texting WAY too much! Seems to be the only way to contact people any more. From what I understand, Jenn really wanted to play with the concept of being consumed by technology and what that has done to our society. Pretty interesting if you think about it. I didn’t even own a cell phone until I went off to college when I was 18 years old. Now, kids are getting cell phones when they are 8! Or even younger!! Scary…

Let’s change gears now…
Do you like dried fruits? I personally love dried fruits. I love them as a snack or in things like bread or muffins. We tend to keep a lot of dried fruits at my house. This is because my mom can eat them as a snack which is a great thing because she has a very limited list of foods she can eat. My mom had the unfortunate luck to be diagnosed with Crohn’s Disease (<—find more info about Crohn’s at this link) about 6-7 years ago. I won’t go into great detail but she has a very strict diet that she needs to stick to in order to be healthy. I always try to come up with things that I think she can eat because she isn’t always so good to sticking to her diet.
I came up with these triple berry scones for her to be able to eat (using all dried fruits). I hope you all enjoy them as much as she did!
Ingredients for Triple Berry Scones:
- 3 cups all-purpose flour
- 1/3 cup white sugar
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 6 tablespoons chilled or frozen butter
- 1/4 cup dried cherries
- 1/4 cup dried blueberries
- 1/4 cup dried cranberries
- 3/4 cup low fat buttermilk
- 1 large egg
- 1 large egg white (save the yolk)
- 2 tablespoons coarse sugar
Preheat oven to 400ΒΊ.
*I want to share a trick with you here…my mom taught me about it last night. If you don’t have buttermilk on hand you can make it yourself really easily. I personally didn’t have buttermilk on hand so I put 1 tablespoon of lemon juice (you can also use vinegar, preferably cider vinegar) in my liquid measuring cup and then fill the measuring cup up to 3/4 with your milk (I used non-fat skim). Let this set for about 10 minutes and you have buttermilk!*
Put your flour, sugar, baking powder, baking soda, and salt into a food processor. Gently pulse the dry ingredients together. Cut up your butter into cubes and place into the food processor. Pulse the processor until the mixture resembles coarse meal. Add your dried fruits and pulse once or twice.
Add your buttermilk, egg, egg white to the flour mixture. Pulse but not too much! It is going to look as my mom called it “shaggy” at this point, I liked that adjective for the dough haha. It should be messy looking.
On a floured surface turn your dough out and knead VERY lightly with floured hands. If you knead too much your scones won’t rise in the oven while baking. Make your dough into a ball then flatten it into a disc that is about a 1″ thick. Cut the dough with a floured knife into 8 equal parts.
Line a baking sheet with parchment paper. Place the triangles about 1/2″ apart from each other making a circle. Take your saved egg yolk and beat it with about a tablespoon of water or half and half. Brush the egg wash on top of the scones and then sprinkle with your coarse sugar.Β *Another trick – sprinkle the sugar not only on top but in the middle of the triangle wedges. When the scones bake the sugar will get pressed between the 2 edges*
Bake the scones for about 14 minutes or until golden brown. Serve warm.
The great part about these are that they are low calorie and that my mom can enjoy them along with everyone else! I hope you all had a great week and hopefully you will have a great weekend as well. Don’t forget to send those positive vibes for the dance company this weekend! π
