Chunky Cod Fish Fingers

::sings:: Give me that filet’o’fish, Give me that Fish! What if it were you, hanging up on this wall…

If you all are wondering what the heck I am singing there, that would be the old Mcdonald’s filet of fish sandwich jingle that they played last year (or was it 2 years ago??), that used to get stuck in my head for daaaayyysss. If you don’t know what I am talking about, google that sh*t and I promise you the YouTube video will come up if you search “Filet’o’Fish”. I used to drive one of my coworkers crazy because I would sing it to him all the time haha, sorry about that Part One. Actually I’m not haha ;-).

During the Lenten season I stick to the no meat on Friday’s very strictly. As I have said previously to all you wonderful people, I really don’t mind not eating meat. I think I could really go without it. I would miss the occasional turkey burger or bacon with breakfast though, I have to admit. The problem with Lent is, I have a somewhat picky eater in my life *ahem*. He tends to get hesitant about new things, even though I have never fed him anything he hasn’t liked. Or so he says ;-). When I mentioned having fish for dinner on Friday he immediately curled his nose up, not surprising. My main man is not what you would call a fish eater…at all. He is brave and tries some of the things I make once in a while, but he hasn’t warmed up to the idea of it being on his actual plate.

Well this all changed when I made these cod fish fingers for him. He was very reluctant when he heard what I was making for dinner, but nodded and said “Ok, I’ll try it”. He cautiously watched me make the fingers and peeked in the kitchen about every 5 or so minutes to, ya know, just see how things were going aka make sure he knew exactly what was going into what I was feeding him. Have Faith my dear! RavieNomNoms is here and she won’t feed you icky food haha. When they were ready I plated them up for him and gave him some tartar sauce for dipping. HOLY MOLY he liked them! I even got, “Wow, I am surprised at how good these are”. Finally…a fish meal that he will eat!! I felt so proud of myself that he actually liked the fish.

If you have some picky fish eaters in your life this is the recipe to try!

Ingredients for Fish Fingers:

  • 2 slices of white bread
  • 1/2 cup panko
  • 1 lb cod filet
  • 1/2 teaspoon salt, divided
  • 1/2 teaspoon freshly ground black pepper, divided
  • 2 tablespoons all-purpose flour
  • 1 large egg, beaten
  • Cooking spray

Preheat oven to 425ΒΊ

Place bread in a food processor, pulse 10 times or until coarse crumbs measure about 1 1/4 cups. Arrange breadcrumbs on a baking sheet and bake for about 5 minutes or until lightly golden brown. Cool and place in a shallow dish.

Cut fish into 3 X 1″ pieces. Pat dry with paper towels and sprinkle the fish with a portion of the salt and pepper. Place flour and egg in a separate shallow dishes. Dredge 1 fish finger in flour, shaking off any excess. Dip fish in egg, dredge in breadcrumbs or panko, I used both because I prefer the panko but I know others that I was cooking for enjoyed the white bread more. Repeat procedure with remaining fish, flour, egg, and breadcrumbs.

Arrange coated fish on a wire rack on a baking sheet. Lightly coat fish with cooking spray. Bake for 8 minutes or desired degree of doneness (is that a word? haha)

I paired these with the garlic fries I made in my last post. They fish was really good! It ended up being moist and crunchy and really tasty. I personally am a cocktail sauce eater with my fish fingers, but my other diners had tartar sauce. Either way it works πŸ™‚

These fish fingers ended up being 242 calories and 5.1 grams of fat. Gotta love that! Eat up!

I think I am going to try my hand at gnocchi for a meatless dinner tonight…what are you planning on having for dinner tonight?

    Raven! Now that song is totally in my head! ha I love that commercial.. these look better than any fish at Mickey D’s though πŸ™‚ I’ve been slacking on the fish fridays, but I might have to make these anyways!

      Thank you very much! I so wish there was a fish market around that I knew about! I would really love to get some fresh fish. I am just waiting patiently for the summer when I get to go the Cape and have fresh fish

    Loved that commercial – first of all – my daddy had one of those singing fish it was making fun of 0 long story. Second, it cracked me up! Loved it!

      He did?!? Haha Kita, that is so funny! I never knew anyone that actually had one of those fish, but that is so funny. It cracked me up too…even more so that when I would sing/whistle it, it would drive one of my coworkers bonkers haha…

    I’m not surprised these were a hit…they look great! An updated version of fish sticks sounds wonderful to me, especially with the garlic fries as “chips.”

    Time was when all the fish Adam would eat was fish fingers, but I’ve since gotten him hooked on salmon and all sorts of other great fish, but it’s nice to find a recipe he’d consider a classic and served with your garlic fries he’ll be very happy indeed. Thanks!
