Lemon Poppy Seed Muffins

I woke up this morning to a cold 26 degrees here in New England. I am craving spring. I am ready for the warmer weather to be here and for it to be sunny. Ready to be able to go outside and walk around at lunch time at work. I love the changing of the seasons but I am so ready for the warmer weather. This has been an especially rough winter so I am looking forward to the nice and bright sun!

In the spirit of spring I wanted to make a muffin that made me feel like it was here, since clearly it is not yet. Whenever I think of spring, I think lemon. It is refreshing and bright! What better way to say “Welcome Spring” than to make a lemon poppy seed muffin…okay, well maybe it isn’t the best way, but it reminds me of the sun because it is yellow! hehe πŸ˜‰

Ingredients for Muffins:

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1/2 cup white sugar
  • 2 tablespoons poppy seeds
  • 2 tablespoons flaxmeal
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons vegetable oil
  • 1/4 cup skim milk
  • 1 teaspoon grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1 (8-ounce) carton of lemon non-fat yogurt
  • 1 large egg, beaten
  • sugar & poppy seeds for topping

Preheat oven to 400ΒΊ

Combine flours, sugar, poppy seeds, flaxmeal (I have been adding this to EVERYTHING lately, I really like the almost nutty flavor it gives things but also the healthy benefits it provides in such small doses), baking powder, baking soda, and salt in a mixing bowl.

Combine the oil, milk, rind, juice, yogurt, and egg. Add this to the dry ingredients and mix until just moistened.

Spoon the batter into cups that are prepared with cooking spray. Bake for 14 minutes or until golden brown on top. Remove the muffins from pan immediately and let cool on wire rack.

Calories 179, 4.9 grams of fat. Which means you can serve it with some butter! πŸ˜€

Shhh wanna know a secret? The way I got those muffins to look so “lemony” was because I added just a touch of yellow food coloring. Just to give it that extra little lemon look ;-).
