Black & Blue til You are Pink Muffins

It is Monday again…can you believe it?! My weekends always go way too fast. I hate that! haha…it seems like no matter what I do those 2 days always go speeding past me clocking at a 90mph pace. I have heard that it only goes faster as you get older too…sheesh! I don’t know how it could!

I think my weekend went fast because I had rehearsal for the show that is coming up. That always seems to make things go faster. I was able to have a little fun though on Saturday night. One of the girls in the dance company turned 30 so we all went out for dinner and drinks (Happy Birthday Noel!! Know whaddI’m sayin? πŸ˜‰ ). It was a lot of fun and nice change of pace from the normal weekend routine.

Onto the recipe, shall we? As you all know I have been on a muffin kick lately. Mostly because I cannot have dessert so I have been trying to keep myself preoccupied with other kinds of things to bake. Naturally I have been making muffins. The muffin recipe was something I wanted to make with the fruit that I had at the house. Which included blackberries, blueberries, and raspberries. I wanted to include them all in the muffin because honestly, I have never seen it done that way. They ended up being really good and full of flavor.

Ingredients for Muffins:

  • 1 cup whole wheat flour
  • 1 cup all purpose flour
  • 1/3 cup honey crunch wheat germ
  • 2/3 cup white sugar
  • 1 tablespoon baking powder
  • 2 tablespoons flaxmeal
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 eggs, beaten
  • 2 cups half & half
  • 2/3 cup fresh blueberries
  • 2/3 cup fresh blackberries
  • 2/3 cup fresh raspberries
  • cinnamon & sugar for topping

Preheat oven to 400ΒΊ

In a large mixing bowl, mix together flours, wheat germ, sugar, baking powder, flaxmeal, salt, and cinnamon. In another bowl, combine half & half and beaten egg. Whisk together well.

Place wet ingredients into flour mixture and combine just until everything has pulled together.

Place washed berries into a bowl and coat with flour. I learned this trick from my mom, it will ensure that your berries do not drop to the bottom of your muffins. Fold in the berries into the muffins mix.

Scoop batter into the muffin cups. If there are any empty cups in your pans, fill them with water before you put the pan in the oven. Sprinkle with cinnamon and sugar.

Bake in oven for about 16-20 minutes.

Wait for it….136 calories and 4.1 grams of fat! BOOYAH! Amazing…
