Crustless Spinach & Feta Quiche
I think I may finally be catching up on some sleep. I lived up to my promise and made it to bed by 10pm, which I have to admit I was really happy about. I feel a little more refreshed today and not as sluggish. THAT is a good thing because I have presentation to give at work today…I hate giving presentations when I don’t feel up for it, so I am very glad that my body is starting to feel a bit more normal today. Whew!
Also, I have figured out a way to comment on blogs again. Not sure why my WordPress ID isn’t working but I am able to make comments with just using my name. Thank goodness! I felt so bad not being able to comment on all those delicious treats you all have been making…
Speaking of delicious treats, for the breast cancer walk that I am doing in July the team that I am on is going to do a bake sale and also a collection from our weekly “jeans day” fund. Every Friday at work people are able to dress down a bit IF they purchase a jeans sticker for $3. The money that is collected is then donated to various charities from all over. On May 20th the jeans day at work will be dedicated to Pink Revolution (my team) and raising money for our walk. How exciting is that? Not only are we having a fundraiser that way but we also thought that having cookies for sale along with the jeans day would be a good idea. I recently purchased a pink ribbon cookie cutter, so I thought it would be cute to make pink ribbon sugar cookies with pink royal icing on top! SO excited for that :-D. It is the little things that make me happy. Side Note: I have now collected $1,154.00 for my walk (goal $2,300). THANK YOU to anyone who has donated! Okay, now onto my dinner last night. I was so craving a quiche for some reason, as I am sure some of you saw on my Facebook Page. I wanted to make a quiche but I didn’t really want to make the crust because I knew it would a little more time consuming AND I just really wasn’t in the mood for crust. This is really rare for me because I am one of those people who could eat JUST the crust on just about anything haha. Anyway, I decided to make a crustless quiche and you know what? It turned out pretty darn good!
Ingredients for Crustless Quiche:
- 1/2 medium onion, chopped
- 6 oz fresh baby spinach (couple handfuls)
- 1/2 cup mushrooms
- 3/4 cup broccoli
- 1 clove garlic
- 2 large eggs
- 4 large egg whites
- 1/2 cup wheat flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon cayenne pepper
- 1 1/3 cup non-fat skim milk
- 1/2 cup feta cheese
Preheat oven to 400º
Lightly spray a 10″ pie plate/quiche pan/tart pan (I used a pie plate).
In a medium frying pan, cooked garlic and diced onion with just a tiny bit of cooking spray or vegetable oil. Add in mushrooms and broccoli. Cook for 3-4 minutes until broccoli changes color. Add in spinach and cook just until it is wilted and then place aside to cool.
In a large mixing bowl, whisk together eggs, egg whites, flour, baking powder, and salt. Add in milk and whisk well. Add in the spinach mixture and stir until well combined. Pour mixture into pan and top with the feta cheese.
Bake for about 25 minutes or until the center is set and the outside edge is nice and golden brown. Let set for about 5 minutes after taking out of oven or you will have a big old mess! This makes about 6 servings and each serving has only 142 calories and 5.5 g of fat! YESSS! 2 pieces please! 😀
It came out perfect! I think I could have cooked it maybe just a little extra time so the middle wasn’t as moist. I tend to enjoy runny eggs though so I thought it was pretty darn good. I paired this with some jalapeno sauce that my mom makes from her garden (uber good!) and then hands out to everyone at the end of the summer. The combination of flavors and creaminess was just what I was looking for in my dinner last night…

Haha, no not high risk reviews. I am in this Blue Ocean group, Nick…and we meet ALL the time to discuss what we can do to differentiate ourselves from our competition. Kind of a team that was built to “think outside the box”. Now that we have been meeting regularly…we have to present our “out of the box” ideas to the management staff. So…that is what I was doing haha.
ANYYYWAYSS, feta IS always good. It is one of my favorites that is for sure! It adds that extra salty and creamy texture that I just love.
