Pretty Pepper Pasta
First off, congrats to CakeWhiz on the Top 9 with my recipe for water cake! I have to give thanks because I got a lot of traffic on my blog yesterday because of that. So a big thanks for featuring my recipe and another congrats for making it look so awesome! 😀
To all of you hummus haters out there…I don’t get you. I really don’t. I love hummus! Put it on a pita, put it on veggies, put it on chips, use it as spread for a sandwich….I lik’em all! Since I have been on the detox my snack in the afternoon is some veggies with hummus (which is delicious!). I think I have had maybe 3-4 people tell me they refuse to eat hummus. WHAT?! How can you refuse to eat something so yummy? Sheesh. I am dumbfounded! Granted there are some things I refuse to eat that some people adore, like…escargot. ::shivers:: Blech!
Now that I am momentarily taking a break done with my venting shesh…on to more fun things!

Onto Day 10 of the Detox and still feeling pretty good. I am starting to get a hint of cravings for certain things. Mostly bread and cheese. I love them both dearly and I could really make a meal out of just bread and cheese haha. That is kind of tough, but nothing I can’t handle. It isn’t like one of those unbearable cravings. It is more like, “wow I haven’t had that in a while” kind of feeling. If that makes sense.
Anyways, I made a pepper pasta that was pretty tasty and is totally allowed on the detox so I wanted to share it with you all.
Ingredients:
- Yellow, red, and orange peppers
- Mushrooms
- Fresh Tomatoes
- Onion
- Whole Wheat Pasta
- Olive Oil
- Garlic
- Red Pepper flake
- Parsley
- Basil
- Pepper to taste
Cook your pasta per the directions on the box. I like my pasta a little undercooked personally.
Throw your olive oil (about 2 tablespoons) into a pan with about 2 cloves of garlic. Let it start to cook and toss in about 1/2 an onion. Let the onion get nice and browned up for that yummy flavor. Then add in your sliced mushrooms. Add in one small tomato at this point. Add in all your chopped peppers and pepper flake, parsley, and basil. Add one more medium sized tomato. Cook until all the veggies have a nice and bright color. Add pepper at very end.
Place your pasta in a bowl and cover with pepper pasta.
There you go! Simple, easy, and healthy!

And I’m printing out this recipe too. I’m going to try to grow my own peppers again this year. Last year, I got a few good peppers but I’m hoping to do better this year – we’ll see!

How can anyone not like hummus??? I’ve got to totally agree with you. It’s fantastic. Have never found a variety I’ve not liked. With celery sticks, perfection! The pasta looks great!!

I know! That is what I am saying Kate…how can you not like it? It is delicious. The other day I just cut up pitas and toasted them in the oven and dipped them in hummus…delicious! I do really like it with celery sticks as well good crunchy treat

I don’t see how people wouldn’t like hummus but there is the texture…some may not be a fan. You can make it nearly any flavor (never had chocolate hummus! HA!) but I LOOOOOVE hummus. Especially spicy hummus!
This pasta sounds good, but I’m still thinking about your stuffed peppers! Those are on the menu for tonight. I have to wing it because it’s supposed to snow tonight so I won’t go much of anywhere…

Well now that you say it that way I can see that. I am a big texture person so if I don’t like the texture I really can’t eat it. For example, I really love the taste of cantaloupe…but I can’t stand the texture. haha.

Hummus is so delicious! I can’t believe anyone would say they don’t like it… My guess is they never tried it, just looked at it and though “Blech”. This pasta looks delicious!! I can totally see myself downing a big bowl of this with a nice glass of wine… oh Yum!!

Hummus is Good! I can’t imagine anyone not loving it, but hey…more for us 🙂 This is definitely a pretty pasta dish, I love veggies in pasta dishes.

I agree, I just can’t see anyone not liking it. I really enjoy veggies in pasta dishes as well. I really think it adds to the overall taste AND presentation.
