Turkey Panini with Thyme Mayo
I am 26 today! OH MY GOODNESS! Where on earth did the time go?? I definitely do not feel 26 that is for sure, well I take that back…sometimes after I work out or after dance rehearsal I feel like I am 26slash50. hehe π
A special thanks to all my family and friends for wishing me a Happy Birthday today, it means so much that you all think of me. Thank you, thank you!! π
This past Christmas I got a panini maker in a Yankee Swap that happens every year. If you have never had a Yankee Swap, consider doing it with your family next Christmas. It is so much fun and everyone ends up having such a nice time AND you normally get some pretty awesome loot! Anyways, so because I got this awesome panini maker I wanted to try it out. I am a BIG sandwich girl, I love having sandwiches. There are just infinite possibilities as to what kind you can have (thanks for my new “sandwiches” cookbook that you got me for my birthday Mom!).
First, what I wanted to do was make a spread for the sandwich because I do love having that on my sandwiches. Note: I am not normally a mayo girl. I would much prefer a mustard or pesto but this was a mayo kinda day, so I ran with it!
Ingredients for Spread:
- Low-fat Mayo
- Thyme
- Parsley
- Garlic
- Pepper
All you do is just mix all your ingredients together in a small bowl and Viola! a spread for your sandwich!
Ingredients for Panini:
- Turkey breast
- Tomato
- Provolone
- Roasted Red Peppers
- Fresh bread – I used Sourdough but you can use whatever you like
Take your bread and lay out the slices on a flat surface and spray on side of each piece of bread with cooking spray. This will help later on when you put the sandwich into the panini maker, helps it to not stick. Spread your mayo on each piece. Lay a piece of provolone on each slice as well, yea that’s right EACH SLICE! haha, I love cheese!
Then place your tomatoes on your sandwiches but only on one side of the sandwich. Layer your turkey on top of that and then add your sliced roasted red peppers.
How simple and awesome does that look?! I am so in love with roasted red peppers, I just love the flavor that they bring to a sandwich! YUM! Place the remaining slices on top of the layered sandwiches and put them into the panini maker. Cook the sandwiches until the outside browns and the cheese starts to melt.
All that is needed now is a fresh crisp dill pickle and chips of your liking, or in my case some veggies and you are all set! I just love all the different kinds of variations you can make when it comes to sandwiches. I mean you can even make dessert sandwiches! I think that will be my next adventure haha π
Thanks again everyone for the wonderful birthday wishes!

What a fabulously easy recipe! I’m always trying to find unique and fun ideas for a lunch sandwich! Turkey and mustard can get reallly old!
RavieNomNoms
Thanks so much Claire! I know, I get tired of the same old same old all the time. I try to just throw things together and see how it goes, this was one of those π

Happy Birthday (a few days late!) Raven! 26… ahh… I haven’t seen that one in many, many years.
Love the panini. I haven’t actually ever made one, but I have a neighbor who occasionally makes them for me. I’m going to have to explore this area more!
Liv says she hopes you dance rehearsals are going well! She starts her competition season in a few weeks. The solo is choreographed and they are in the cleaning process. Fingers are crossed!

Raven, I just had to write you! I was picking Liv up at her competition rehearsal yesterday and could overhear the kids talking about the famous dancers that they knew. Then I hear Liv’s voice pipe up and she says “Well… my mom is friends with a famous dancer from New York. She just got a new job and her name is Raven. Not sure if she is on Broadway, but she might be someday.” Thought you would enjoy that!! =) Happy Weekend!

My girlfriend and I love getting together and coming up with interesting Panini recipes. I have mixed basil in with mayo, but not thyme. She’s gonna love this. And it goes so perfect with the turkey. I want to make panini’s now:)
RavieNomNoms
Ooo so this is perfect for you guys! The mayo was really really good, I have done the basil too and I adore that as well. I feel like I like mayo more when it is flavored somehow, when it is by itself, it is boring and bland for me.

Oh and blessing in your 26th year! π

Thank you!

I hope you felt special on your birthday, sweets!! They only come once a year you must enjoy them to the fullest. π
The thyme mayo sounds like it adds perfect flavor to the turkey! Pannini’s are ridiculously GOOD. I love the crispy grilled outside. Your sandwich turned out perfect.
