Dinner with Mom & Dad
Sheesh what a week this has been already! Busy busy! I woke up this morning to the pitter patter of rain on my windows and I just did NOT want to get out of bed. It has been a stressful week at work which made we want to stay in bed even more, haha. One of my co-workers retired last week and that has made for some additional work on my plate. I am hoping that things will even out in the coming months, but for now it does not seem to be slowing down.
This past weekend I spent some time with my parents and of course you know what that means, LOTS OF FOOD! My mom loves to feed people and I am of no exception to that truth. Her food is always outstanding though so I never complain, hehe. On top of getting lots of yummy food to eat I saw 2 movies I haven’t seen before…Gran Torino and The Fourth Kind. The Gran Torino was a good movie starring Clint Eastwood, ::Clint voice:: “Go ahead, make my day”. It is definitely not for anyone who is offended by people being politically incorrect…but it was a really good story. The Fourth Kind was kind of a suspense/thriller type. I will just leave it at that haha.
So! Onto what my mom made. She tried out a new recipe for Mozzarella sticks. Now, when I was younger this was one of my most favorite things to eat when we went out to restaurants so I was really excited to see her try to make them.
Ingredients:
- 2 eggs
- 2 cups skim milk
- 1 1/2 cups Panko
- 10 egg roll wrappers
- 10 mozzarella string cheese sticks
- 1 quart vegetable oil for frying
Directions:
- Beat the eggs in a mixing bowl. Whisk in the milk, then set aside. Place the bread crumbs into a plastic bag, and set aside.
- Separate and place an egg roll wrapper onto your work surface with one of the tips pointed towards you. Moisten the two far edges of the wrapper with water. Place a string cheese stick onto the corner nearest you, and roll it in 1/3 of the way, fold over the right and left corners, then continue rolling to the end, pressing to seal. Repeat with the remaining string cheese sticks and egg roll wrappers.
- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Dip the mozzarella sticks into the egg wash, then toss in the bread crumbs. Cook in batches in the hot oil until crisp and golden brown, 3 to 4 minutes.
These were awesome! They were not greasy at all and the good part was, if any of you have ever made mozzarella sticks you will understand, they did not explode! The egg roll wrappers really kept the cheese nice and contained so the cheese did not leak out. YUM! Nice work mom!

As for drinks we have my most favorite beer of all time Yuengling (I am actually going back to PA soon for a PSU game so I will get some more to keep the pantry up haha). It is actually featured as one of the Eat This!, Not that! beers that are better for you than most. So I don’t feel bad about drinking it haha π
Now onto dessert. My mother made homemade cinnamon rolls and banana cream pie. Holy deliciousness! Both of them are to die for and I have the recipe for neither of them so you will just have to enjoy the pretty pictures haha π
This pie was so fantastic! It being Thanksgiving time and all I know I am going to get spoiled with lots more pie and goodies but my mom seriously makes the BEST pie you have ever had in your life. Her crust is one of the best I have ever had. It is flaky (but not too flaky) and buttery and YUM, just NomNoms haha.

I liked the movie Gran Tornino until the very end. I never saw the other one I’ll have to check that out. We saw Ramona and Bezus, Iron Man 2 and Fame this weekend. The first two were good but Fame left me disappointed for some reason. I was in love with Fame when I was little. They had a movie and a show from what I can remember and this just didn’t give me that same warm fuzzy feeling.

Haha, I would but I am not sure those recipes are up for grabs until she is on her death bed! hehe. I was actually disappointed in Fame as well, I loved it when I was little and I was so not impressed with the movie at all. I wanted to see Iron Man 2, but never did get a chance!
