Taco Cups

Yes, you saw it right. Taco Cups.

Here is another great recipe for those football game days. It is always good to have bite size snacks for game days because if you are anything like me…you can’t focus on anything more than reaching for the food and then putting it in your mouth. Who needs a knife and fork on game days?! Not this girl! haha…not to mention if my team does anything good, and if I had anything more than a napkin in my lap?? Holy shmoley the carpet would be in trouble, haha 😛

Now, that I have completely embarrassed myself by telling all of you that I am not exactly what you would call a “lady”  on game days 😉 …let’s get to those cups! (this works awesome if you have taco leftovers like I did!)

Ingredients for Taco Cups:

  • 1 package phyllo/fillo dough
  • 2-3 tablespoons butter
  • 1/2 cup of re-fried beans (I never use anything but the fat-free re-fried beans)
  • 1 cup taco meat, (sshhh! it’s really ground turkey pre-cooked because I had leftovers, season however you like I normally use salt, pepper, cayenne, and red pepper flake)
  • 1/4 shredded cheddar cheese
  • 1/2 cup light sour cream
  • 1-2 jalapenos (thinly sliced)
  • 7-8 cherry tomatoes (halved)
  • Chives (to your taste)

Preheat oven to 400°

Directions:

Start by taking your phyllo/fillo out of the the package and place it on a smooth surface, place damp towel over top of the pile. Melt your butter into a small bowl. If at any time your butter starts to thicken up, place it back into the microwave for a few secs. Chunky butter = bad in this recipe.

Lay sheets onto another flat surface and brush with butter

Layer the dough about 6-7 times, brushing with butter, EXCEPT for your last sheet. Honestly, when I made this recipe I used 6-7 layers but I think I would prefer only 3-4 for the next time. Slice the dough down the middle and then slice opposite way to create 8 squares. See below for diagram:After you have sliced them, then peel them up from surface and gently place them into mini baking cup pan, make sure that the edges are pointed upward or the thin sheets will burn in the oven.

Place these into oven and let cook for about 8-10 minutes or until they start to brown, and when they start to brown they will get REALLY brown REALLY fast, so pay attention to your oven while these little babies are in it.

Turn the oven down to 350 °

Let the cups completely cool off an place them on a cookie sheet after they are completely cooled. After they have cooled, doesn’t take very long, slightly heat your re-fried beans so that they are a little easier to work with. I find when the beans are cold it is much harder to spread them. Honestly, if I had had any black beans I would have forgotten about the re-friend beans completely and used those…unfortunately I was all out, bummer!

Use small teaspoon to place re-fried beans and also the meat into the cups

In a small bowl, mix the sour cream and the cheddar cheese and chives. Then take that mixture and dollop on top of cups. Place a slice of jalapeno and a halved cherry tomato on each cup.

Place back into the oven for about 5 minutes at 350° just to warm all the ingredients together. 10 minutes at the most! Again, keep your eye on them because they brown fast.

Ok, so they aren’t completely bite size…it takes about 3 bites, hehe 😉
