Summer Bread

Ingredients for Bread:

Loaf of Italian bread (can be a day old)

3-4 tomatoes

1 green bell pepper

fresh mozzarella

6-7 basil leaves

2-3 cloves garlic

Olive oil (2 tablespoons or so)

Preheat oven to 350 ยฐ

Now that summer is coming to a close this is what I am going to miss from the summer the most. My garden….there is absolutely nothing better to me that fresh produce from your garden. Everything tastes better, it even feels better making it when it comes from your own garden/home.

This bread is something that I really enjoy and I make often during the summer because it is so tasty and just SO easy to make it truly is one of those summertime recipes that I miss when it gets colder out. There is nothing better to me than a tomato out of the garden and this year the tomatoes have been DIVINE!

Directions for Summer Bread:

Slice Italian bread in 1″ sections and place onto baking sheet. Chop garlic finely and place in a bowl with olive oil. I normally use about 2 tablespoons but feel free to use more. Brush the garlic olive oil on both sides of bread. This helps crisp it up really nicely once you cook it.

Place sliced tomatoes on top of bread. I personally like them a little thicker but you can slice the tomatoes at whatever thickness you like. Thinly slice green bell pepper and place a 2-3 slices on each bread section. Then layer your fresh mozzarella on top of your bread sections. Again, as thin or as thick as you would like the mozzarella to be. Then slice your basil and sprinkle on top of each section.

Place in the oven and let bake for about 15-20 minutes or until the cheese has melted.

You can serve these hot, warm, or cold. I actually love to bring these into work the next day after I make them for lunch. They are great cold as well!
