Chicken Wraps with Pesto Aoili
So, I left the blogging world there for a couple days…sorry my fellow bloggers! I am back…I just had such a rough week at work. Had one of those work weeks that makes you question what you do and why you work so hard. Was feeling kind of down on myself, but I am so glad it is Friday and that I get a few days off from work. Actually this weekend my parents are throwing a BBQ, which I am actually going to help my mom with ALL day tomorrow prepare for. So hopefully I will have lots of fun pictures for your viewing pleasure at the end of the weekend 🙂
So I have been craving wraps lately. Not sure why…maybe it is because I think they are healthy and sometimes you just feel like having something healthy for dinner. While this wasn’t anything particularly hard to make it did have a lot of components that gave it some great flavor. Check it out and let me know what you think!
Ingredients for Pesto Aoili:
7-8 basil leaves
2 tablespoons light mayo (miracle whip)
1 tablespoon parmesan cheese
1 clove garlic
Ingredients for Chicken Wrap:
Whole wheat wrap
Chicken breasts
Roasted red peppers
Tomato
Fresh Mozzarella
Lettuce
Rosemary
Salt Pepper
Olive oil
Mushroom Side Ingredients:
Mushrooms of your choice
Tomato
Salt
Pepper
Garlic
Olive OIl
