Patty Melt
OHMYGOSH! People are coming over and I had no idea! WHAT DO I HAVE IN THE FRIDGE?! Ok, ok, ok….think. (ever had one of these moments??? I did just recently. I had no idea that people were coming over for dinner and fun because sommeeonneee had invited people over…which wasn’t a problem because I love the people he invited, BUT I was SOOOO not prepared to feed them!!)
Hmmmmmmmmm, I gotta give them some kind of an appetizer….ok, vegetables and dip will just have to do.
Ok, what else do I got here…I have some sourdough bread, fresh mozzarella, roasted red peppers, tomatoes, lettuce, ground sirloin…I GOT IT! Patty melts!
Now, a traditional patty melt has caramelized onions, ground beef, cheddar cheese, and rye bread…but I didn’t have any of that so I improvised. haha :-)! If you have never had a patty melt, it is basically a glorified grilled cheese sandwich. You cook ground beef in a pan, seasoned how ever you like it, toast bread on a skillet, place all your ingredients on the toasted bread on the skillet and then let the cheese melt around the ingredients…see below!
I tried my hardest to make these has healthy as possible! Used mozzarella instead of cheddar, sirloin instead of regular ground beef. haha, kind of hard with patty melts, but HEY we had vegetables so that cancels out all the butter I had to use on toasting the bread right!? hehe π
Here is the finished product. I was really worried that I wouldn’t come up with anything for my guests to eat…but they seemed really happy with what they got, and people being happy with what I make for them…makes me happy too!

Yes, everybody knows that vegetables cancel out butter and that the calories in cookies don’t count if you stand up when you eat them π

Always nice to meet a fellow K.C. foodie!! π …I lived in K.C. until I was about 13 and then moved to Philly (now I am in CT), so I guess you could say I was “half-raised” in K.C. haha. I still go back every year to visit family and get great food! (I have to get my Gates BBQ fix taken care of on my family trip haha) Thanks for your comments!!
