Pancakes for Dinner

Thanks everyone! You all have been so sweet and supportive of Patrick and I with our new house. We are so very excited about it all and thank you all for being excited with us!

Every time I look at it I get so excited now! I have to admit that when we first found out that they accepted our offer it was kind of a mix of emotions.

I mean…when you buy your first house, it almost like you are saying goodbye to your childhood. I have been with my parents now for a long time and I will be going out on my own now, well with Patrick too.

The more I think about things the more I get excited but I know when the time comes for me to move out of my parents house once and for all, it is going to be hard.

It’s a big step, but I know Patrick and I will make it through it.

Everything is going well thus far ::crosses fingers::

We have the inspections scheduled on Monday of the upcoming week. The agent seems to think we will be in good shape because the couple that lived there prior to us only lived there for 1 1/2 years before they had to relocated and they had all the inspections and tests done at that point and they did upgrades because of some of things they found.

Send us some positive vibes that everything will go smoothly πŸ™‚

Do you like breakfast for dinner?

It is one of my favorite things to have and always has been. I remember getting SO excited about it when I was little when my mom would say we were getting breakfast for dinner.

Almost made me feel like we were doing something bad and when you are a kid, doing something bad is always fun because you aren’t supposed to do it πŸ˜‰

Last night I wanted that comfort that I got from having breakfast for dinner as a kid. It is comfortable and makes you smile when you eat something that you should be eating for breakfast at dinner time.

Now I have to warn you I cheated a little bit because things have been so crazy lately for Patrick and I. I used Bisquick…shhhh don’t tell anyone. πŸ™‚

However, I did make small changes to the recipe on the box that you find to make it a little healthier for you. That way you can have a couple extra pancakes.

Ingredients for Pancakes:

  • 1 1/4 cup Bisquick mix
  • 1/4 cup egg whites
  • 1/2 cup skim milk
  • 1/2 teaspoon cinnamon

(makes about 7 – 4″ diameter pancakes)

Mix all your ingredients together until the lumps have disappeared. Let the mix sit for about 5 minutes before you cook with it. I always let it sit and then I stir it again just before I cook.

Heat a skillet on medium heat and coat with cooking spray. Drop your pancakes into you pan and wait until you see bubbles start to form and then flip. Time will vary depending on how hot you pan is.

I topped my pancakes with bananas, strawberries, pineapple, and some lite syrup (Patrick has gotten be hooked on a brand that he really likes haha).
