Black Bean Burgers
The moving is still going on. We have made some major headway and I am glad to report that we will be finishing up this weekend! WOOT!
Saturday morning we have a crew of guys coming over to help with the really big furniture, which will make this entire process a lot easier. With moving as much as I have in my life, I have gotten pretty good at boxing and moving things…but those big pieces of furniture they are a b*tch to move!
One word of advice if you ever do move, use a moving company. I know it is pricey but I promise it will be worth it when you don’t have to move all the heavy awkward stuff.
Besides all the moving the actual “stuff” I am feeling really good about the move. I am super excited and I think the move will be a really good thing for Patrick and I. Really looking forward to it happening! 🙂
Changing pace here…
So I am a big fan of black bean burgers. Ask Patrick, I would literally rather have a black bean burger, or any kind of vegetable really, over any kind of a meat burger. Why? Couldn’t tell ya.
This recipe I found a while ago in my travels through food blogs and decided to change it up a bit so it would fit with the detox that Patrick and I are doing. It has been going well. We have 2 days left! He keeps saying he is eating more now than he did before…but he is eating fruits and veggies now instead of cookies and chips. hehe

Ingredients for Black Bean Burgers:
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 tbsp minced jalapeno peppers (I kept the seeds in but remove if you don’t want it as spicy)
- 1 tsp ground jalapeno pepper (like actually pepper, as in ground black pepper kinda pepper. Not the vegetable pepper haha)
- 1 tsp ground cumin
- 1 (15 oz.) can black beans, drained and rinsed
- 1 1/4 cups cooked quinoa
- 2 tsp fresh lime juice
- 1/2 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1 tablespoon dried parsley
Heat 1 tablespoon olive oil in a large skillet set over medium heat. Add onion and sauté until soft. Add garlic, jalapeno, and cumin. Saute for additional 2 minutes.
In a food processor add black beans, quinoa, lime juice, salt, pepper, parsley and jalapeno pepper. Pulse until the beans are chopped, but not pureed. Add in cooked onion mixture and pulse until incorporated.
Divide the mixture into 8 equal portions and form into patties. This mixture will be semi moist, but don’t be scared of it. They will be fine once you cook them.
Place the patties on a baking sheet lined with plastic wrap and sprayed with cooking spray. Cover with additional plastic wrap. Refrigerate for at least 1/2 hour.
Preheat oven to 400°.
Take your patties from the fridge, remove plastic and coat baking pan with cooking spray. Place black bean burgers on sheet. I got about 6 on one sheet.
Cook the patties for 16 minutes, flipping once in the middle or until the patties brown.
Serve with your salsa of choice, tomatoes, and lettuce. Avocado would be excellent with this as well, but I didn’t have any 🙁

There is actually quite a few spice stores that carry that kind of pepper. If you can’t find it then just substitute red pepper flake 🙂

Good luck with the move! I totally agree with you on the movers. I coughed up the cash for my last move, and I will never ever try to move myself again… they were worth every penny we paid (and really, a UHaul can be pretty expensive once you add in the mileage and gas)

Oh you should try Erin! Do you not even like beans that are pureed down like hummus? If you do, try making the black beans more processed that way if it is a texture thing the processing will make it more like a spread than the beans. You are missing out my dear!
